My aunt, just left me you put the eggs in after she mixed in the flour mix. It really made the pound cake 🎂 fluffy. Unlike the other recipes that incorporate the eggs with the butter and sugar. And my aunt's cake like yours was plump, hi, in size yet moist. I love your simply supreme directions. You can't go wrong with a true lemony flavored pound cake. Excellent job my friend. I have the same pan. Cakes comes out great, but I do like the grooves that the original bundt cake pan has, so I bought a larger pan. I bought a larger pan and I don't have to worry about the batter over flowing
I think when I make my lemon cake I will put the lemon zest in and fold it in with my spatula , because I kinda feel like that most of the zest will end up on the beater . Great job , thanks for sharing . I'm going to make this next week . Your cake turned out beautifully .
My 98 year old Aunt loves my Lemon Pound Cake. She won't let anyone have a slice. She cuts the cake in slices and freezes it. Everyday she microwaves a slice to have with her coffee. I'm going to switch your recipe on her. Now watch her say she likes yours better. Lol. That's okay as long as she's happy. 😄 She's the last living Aunt that I have on both sides.

I made this cake I didn’t follow the recipe with all the ingredients because I did not have the almond and lemon extract I added lemon yogurt it came out wonderful. My granddaughter and her husband is going to love it I made it for them for Christmas

I love the lemony pound cakes that taste tart/sweet if you can understand what I am saying. I made a lemon pound cake last year, and it tasted very lemony in the batter, but when it finished cooking the lemon flavor had evaporated and it only had a hint of lemon. Maybe you can give me a solution. Have a blessed day. By the way, when you beat it in the mixer, the eggs caused it to bulk up and that's why you have so much dough.

Hi so sorry just seeing your question, Not sure if you have tried making it yet. But I usually beat my batter until it's light and fluffy no specific time. ( butter & cream cheese) when you add the sugar you just want to make sure its all incorporated into the batter where your still getting the light and fluffiness. I don't sift my flour and . Hey sis, I have to be honest, I really do t know. But my honest opinion you don’t taste cream cheese at all in the cake .Try you it , you will do be glad you did. ❣️
Very surprised how long you mixed this cake and no gluten formed. I discovered the reason. Less protein is in cake flour. Note to bakers do not over mix using APF or you will have a heavy cake. I will be baking this soon.
Also she did what we call reverse creaming no matter the flour cake or all purpose normally we would add the eggs after creaming butter and sugar but she add the flour next coating it in the butter and sugar which prevents the proteins aswell from forming causing a heavy cake I use this method and it works great makes a lighter cake for sure but if your going to do the old fashion way cream butter and sugar then eggs one at the time them alternate milk and flour then no you can not over or under beat

You can try using Monk Fruit! It tastes very much like sugar, has no chemical aftertaste because it’s all natural, zero calories, and registers 0 on the glycemic index! I use 50% more Monk Fruit than regular sugar, but you can measure it to taste.
Have you tried lemon oil instead of lemon extract. You literally put drops in instead of teaspoons. It is so potent. They sell it at Michaels or Joann or any craft store that has baking supplies.

Is your oven cold? How long are you baking it and st what temperature?
No I preheat the oven to 350 and I cook it for 1 hr and 15 minutes .
Mix the zest in with the flour to prevent the zest from sticking to the attachment.

Instead of using Swanson cake flour, could self-rising flour be used as a substitute?

Have you tried lemon oil instead of lemon extract. You literally put drops in instead of teaspoons. It is so potent. They sell it at Michaels or Joann or any craft store that has baking supplies.
