Oh Martha, I love condensed milk too. As a child my siblings and I grew up on it. I use it in my Orange Pekoe tea and also my coffee. That is one thing I cannot seem to stop using. As kids we used to put it on a slice of bread and eat it.

It would be so nice if Martha did a new show, just solo, something like this series "Martha Bakes"... but of course with a different topic than baking. Although I'm not sure what the subject or format might be, because she's really done it all. I think she does not like to repeat herself in projects ... Martha once said in a Vanity Fair questionnaire when asked what her favorite quote is: "When you are through changing, you are through". There's something so nice about this format because there's an intimacy here. It's basically Martha and the viewer. And she has such infectious enthusiasm.

With my experience with pound cake....there can not be any substitutes with the butter, it needs real butter always. Thanks for the cream cheese variation!
Martha, I have a question about the baking time for the cream cheese poundcake . I double checked the ingredients and didn't overmix as you mentioned. I separated the batter into two loaf pans just as you said and placed them on a cookie sheet. The oven was set at 325 degrees, preheated, and I baked it for 50 minutes but when I checked them both they were far from finished. My stove works fine so I'm confused. The total baking time was 90 minutes. The pound cake is delicious but I'm curious if anyone else had this issue.

I have a question. The recipe calls for 4 cups of flour. Once sifted and remeasured, there is flour left over. Should all of the original flour be used or just 4 cups of sifted flour?
Admittedly, I was so lazy. I did not butter and flour my pound cake pans beforehand, and just put the “classic” pound cake batter into 2 of them - they were cast iron loaf pans, very heavy! And the cakes came out perfectly! Maybe Martha can try cast iron here (?) - the “classic” pound cake batter has so much butter in it so it should work, perfectly (?)
