    MAKE AHEAD BREAKFAST BAKES FOR CHRISTMAS MORNING
    Makes 6 (in 1 cup ramekins) *Print Recipe here bit.ly/2CqW2Lo
    INGREDIENTS:
    2 tbsp (30ml) Extra Virgin Olive Oil from Spain
    1 ¼ cup (190g) of leeks (white parts) sliced thinly into half moons
    6 cups (1400ml) bread cubes from a rustic loaf, dried out
    6 eggs
    2 cups (475ml) heavy cream
    3 tbsp (45ml) white wine (or the same in more heavy cream)
    1 cup (240ml) grated Swiss Cheese (reserve ¼ cup for topping)
    2 tbsp (30ml) chives, minced
    fresh pepper to taste
    4 slices Black Forrest Ham, diced
    METHOD:
    In a large skillet add olive oil and heat until hot. Add leeks and allow them to crisp up and turn golden brown in the oil, stirring occasionally. Drain with a slotted spoon and set aside to cool.
    Preheat oven to 375F (190C).
    Cut bread into 1” (2.5cm) cubes. Place on baking sheet and bake at 375F (190C) for 15 minutes until golden brown and dried out. Allow to cool and set aside.
    Spray 1 cup (240ml) oven-safe ramekins with baking spray, place on a rimmed lined cookie sheet and set aside.
    In a large bowl add eggs, cream and wine and whisk to combine.
    Add cheese, ham, cooled leeks, chives and freshly cracked pepper. Stir to combine.
    Fold in bread cubes, making sure all bread is soaked in the egg batter.
    Scoop out 2 scoops of the bread pudding mixture with an ice cream scooper into the ramekins. The first scoop should be more egg batter than bread, the second scoop more bread than egg batter. Sprinkle 1 tsp (5ml) of reserved grated Swiss cheese on top of bread cubes.
    Group ramekins together on the baking tray, and cover as a grouping with foil. Place in refrigerator overnight or a minimum of 4 hours, to allow bread to soak up the batter.
    The next morning pre-heat oven to 375F (190C) and remove foil and place tray with ramekins in oven for 25 minutes until bread on top turns golden brown. Then cover gently with clean foil and continue baking until egg is set for 10 minutes more. Serve immediately either in the ramekins or remove from ramekins by turning upside down and then right side up, and serve on a plate.

    Hi Beth, (LOVE you!). I have made these just as your recipe states and they are incredible. I am making them this weekend as a breakfast gift since we are staying over night at friend's house. I am going to 'try' and make them replicate a lox bagel sandwich. I will use smoked salmon, capers, finely diced red onion and sprinkle trader joes everything bagel on top. I'll serve it also with sliced fresh tomatoes along side. I can't wait to let you know how they come out :)

    I will DEFINITELY be making this! But I have 2 questions: do I bring the ramekins up to room temp after removing from the fridge, and, if I choose to make it in a casserole dish, is the baking temp the same? Thanks, Beth!

      Sure you could bring the ramekins out of the fridge to get to room temp while your oven pre-heats, and yes same oven temp and technique if you use a larger casserole :) Just be sure to grease the casserole as well with baking spray so you get nice clean slices otherwise the eggs and cheese are pretty sticky! :) Hope you enjoy!

    You inspired my "little sous-chef" to make a sweet version of this ... we used pumpkin rustic loaf and eggnog instead of cheese... Added a little extra cinnamon, and BOOM.. New Christmas morning tradition... Ps it was Amazing!!...

      Oh no! You guys have had quite a year of weather!! So glad you enjoyed the video though ha! We were having our own bit of weather the day I shot this, pouring rain! Not sure if you can tell but if you look closely in my on-cam parts you'll see all the rain drops! Great for the garden though and our poor drought-ridden California! :)

    This was delicious. We used a 9x13" Pyrex, so the baking took quite a bit longer than the stated 35 minutes. I'd say it was probably closer to 50 minutes (since we put it back in a few times to make sure the egg was no longer liquid). I think the ramekins would also help with portion control, since everyone went back for more ;)

    I would love to make this for my sausage-loving husband... would I just switch the ham for cooked ground sausage? Do you think all the other ingredients would work?

      Oh sure just add some more heavy cream, the same amount as the wine 3 tbsp. How you enjoy!!

    I love your videos, but we're a vegan family. I'm going to try "veganising" this by using chickpea flour+plant milk as the egg mixture, nutritional yeast for the cheesy flavour, mushrooms+olives instead of ham, with a little vegan cheese on top to melt. Wish me luck!

    Total failure for the part of the family...sort of. I put these together early Christmas Eve and they equaled 6 ramekins perfect...6 people would be here for breakfast! Three family members were here and the others would be coming later Christmas. So Christmas morning, I made coffee, put these into the oven and prepared a few other quick things. Told the boys (16 & 18) to take out of the oven when timer when off and headed to the shower. Just about the time I came out getting showered/dressed, the remainder of my group arrive but what the heck, I only had TWO ramekins left! Those two boys had decided to go ahead and eat while hot and they were so GOOD they each ate another! We divided the remaining two among the rest of us and I ended up cooking additional eggs/bacon on Christmas morning. Just what I was trying to avoid! Next year, I'll double! They were wonderful, quick, and easy, and a big hit!! Merry Christmas!

      Oh no Nancy! Your story just made me laugh out loud! LOL! I can totally picture this scene! 😂😂😂😂Well at least your hard work didn't go to waste?! At least they were gobbled up! Ha! Poor thing! Yes next year double the recipe! Ha! :)

    Query, could the bread not be put in the toaster and then cut instead of grilling after cut?

      In a pinch you could try that, but the bread might get to crumbling after cutting it, and you could end up with too many bread crumbs in your puddings :) . But if you only have a toaster oven then sure! It will still taste good :)

    dear Beth, when giving recipes you always mention that if so doesn't drink they should this or that instead. could you also be this attentive about meat? could you offer us an alternative that comes in mind for the ham here? xo

    I went to make this and realized that you never mentioned the amount of bread cubes, making this an incomplete recipe. Please mention the amount of bread to use.
