Thank you for your efforts and participation in canuary. What I learned from this demonstration is that I am putting too much ‘solid’ in my jars. I need to remember no more than half full and finish up with an equal amount of liquid. Bing💡the light went on!☺️ I also appreciate your link to Healthy Canning.

Rachel, I never precook my beans, anymore. They are beautiful and not at all mushy. Pints = 75 min. Quarts =90 min.

I love canning because it is usually a lot cheaper and most definitely tastier! Many times I will add up the cost of a meal from my home canned foods and figure out the cost per serving. It makes the hard, long day of canning that much more worthwhile! I am teaching my daughters to can and I am so thrilled that they are ready to learn!
I canned my three bean soup recipe and it is a huge hit! I also can all types of dried beans because I do not like the taste of processed beans, they taste like metal to me.
I can all year as well. I canned chicken yesterday and today I filled my dehydrator with cinnamon apple slices.

Ok, now I want to make some white beans! I soak them overnight, drain, rinse, add new water. I use a ham steak, (if you get a ham steak with the bone, do add the bone!), cut into pieces, but you can use 2 or 2 slices of bacon or a ham hock. Add a large onion, 2 or 3 cloves of garlic, a diced potato, a sliced carrot, if I have it, a little oregano, basil and bay leaves. I also add about a half of a small can of tomato sauce, and pepper. Oh my so yummy! Your soup sounds wonderful!
I take my dehydrated veggies …..jalapeños, onions, celery, shredded carrots, mini peppers and add it to each jar then put my beans and chicken broth in….makes a spicy base soup for a dinner…while warming up add cooked rice or noodles and meat and you have a fast meal.
I cook the rice and noodles and package enough for a few meals to have on hand in the beginning of the week. Adding this base soup over a baked potato, taco or chili seasonings and chopped tomatoes, sour cream makes a great dinner also.
I made bean soup in the instant pot yesterday with the leftover ham bone from New Year's dinner. It was my first time cooking with dry beans in the instant pot. It turned out really good! The ham was so tender and flavorful. I think cooking the ham bone in the soup makes the flavor so much better! I will freeze some of it for later. Next time I will make a BIG pot in my roaster and can it up...what a time & money saver to have it ready to heat up and serve...

We love Ham and Beans all year long. But, we were raised on Pinto Beans, so, that's what is in my beans😊. My Mom made a batch of Ham and Beans with northern beans years ago and we all refused to eat them (just until we got real hungry -- not the greatest flavor for breakfast😅). Yours do look wonderful. May have to give them another try...
That looks so good Rachel. I canned all my soups a few months ago. I canned, white bean, black bean, stuffed pepper, stuff cabbage and chicken soup. It's just me so I did 4 qts each except the chicken soup I did 4 qts plus 4 pts. I have already had some and they were amazing.

This is the best money saving ,soup is my favorite eat tons of it in the winter and for the price of 1 bird can get a case of homemade soup can't beat it . I bet this is yummy I will need to try it .
I am making this now and smells amazing ! I had canned northern beans , Italian sausage and celery , added some dried zucchini and spices , chicken broth ,a great dinner .
I am always up for soup canning ideas. I have thought about canning soups I make for a meal because there is so much leftovers plus I have no more freezer space. I am definitely looking forward to the Mexican soup.

Soup looks tasty. I've never seen dried Northern beans in grocery stores, so here's a tip...You can substitute Navy beans which are smaller OR - Cannellini beans (White kidney beans) which are larger. 😊

Rachael, give me your secret to the lid thing. My husband is the one that does it and when I do it I usually have a stream of steam. Mine has a bit of a wobble to it and I am told that is normal but I just can't seem to get that bugger on right at all. I have the All American 925 canner.
A lot of work but very economical and it works out to be about 24 cents per pint of soup. Amazing

Luv your videos I want to try soup but I am afraid of canning meat yet I don't trust myself enough to pressure can them but one day I will try
The basic principles are the same for pressure canning meats and vegetables. As a general rule, each vegetable type will have some specific preparation guidelines. It's the same with meats types. With all of these, the variable is altitude and processing times. Once the food is prepped & jars are filled, processing sequence is the same. If you can process plain water, using chicken broth instructions, you can also can meat!
For anything you can, fruits, vegetables, meats, combinations of same, just follow the prep guidelines, general processing guidelines, and the specific pressure and time for your altitude, you will be fine. Once the canner is loaded there's no difference between processing beans and venison burgers. They require the same processing steps, pressure and times, based on your altitude. In fact....
In my pressure canner I can process a canner load of 9 pints of pinto beans and 9 pints of stew meat at the same time. The only material difference is the prep work for each before I load the canner.
Hope these words will give you encouragement to put protein and meat stocks on your pantry shelf. You'll smile when you see those jars filled with "heat & eat".

I make a version of this soup but don't pre cook anything. I know the jar 1/4 full of unsoaked beans makes a full jar so I do slightly less then add the veg and broth and process everything form raw. Less time and mess for me.

We've done a few ferments but honestly it's not my preferred means of preservation. I don't enjoy the taste myself of most fermented food

Yes this is for sure this year id ordered lids and they still haven't come so hard to find here recently. The only way I was able to do any canning I stocked up. Many ppl going crazy buying meat and canned goods the first day of furlough I bought seeds not a soul was in the section by the way and what ever they had in lids and jars. Lol which wasn't much bc out of season then everytime asked for apple cider vinegar and distilled lol. And the reason didnt run out was mamawlou gave me all her canning stuff she had the good old ball lids not sure tight. This year am not sure still hadnt received the order from lehams got partial of it. Luckily so far been ordering things early enough so we shall see how the rest year goes. My grandma she had ton and tons of jars. But who knows what happen to all that so sad situation there and we were sick when they sold her house and lord know what my deadbeat uncle did to that stuff since she passed we have yet to see him again
The best part of my lehams order was water bath canner. Usually went to moms in the past she had it all but had to step it up she had shoulder surgery rt before everything hit amd so I needed to grow the garden and help her out as much as possible since dad can only so much too since he brain cancer but luckily so far we made do thanks to all these vlogs I started watching lol ive helped gardening with mom n dad and when married also my inlaw grandmother and there so much we all learned just watching the vlogs .....thank goodness roght didjt even know what vlog was until furlough never had time to sit and watch before hand. Super excited to have my own garden and teach my lil man he enjoyed it and was so proud...hope his curiosity continues...thanks for all your vlogs

Just remember in a mixed batch to process that batch as though they are all the larger jars....Use the quart canning time.
Yes, without any problems if a single layer of jars. It depends on the size (height) of your canner if you can stack pints on quarts. The extra processing time on the pint jars usually doesn't make any material difference.
What do you do with lids that have already been used for canning?
I think she once said she used tattler lids which are reusable.
The metal ones, we toss them into a drawer and keep them. We use them for storing dry-goods.
Eileen, I save our undamaged used lids to vacuum seal jars of dried foods, using the FoodSaver Jar accessory. No need to buy new lids for that. If one used lid doesn't work, toss it and grab another one. These can also go into the white plastic one piece lids for mason jars. (I use the ones from Walmart.) They don't have a sealing gasket inside. By inserting a canning jar lid, then screwing down the plastic lid, the canning lid becomes a "gasket". This is good for temporary storage of dry foods that you don't want to vacuum seal for some reason.

:) Nope, if you follow your cancer's direction book you will NEVER have a problem. You can do this!!!!
Modern canners have a safely release plug /valve or other mechanisms that prevent that from happening. Next, the regulators on modern canners release steam automatically, when the pressure exceeds a specific limit. If that isn't enough, that's when the safety release plug will "blow" instead of the whole lid. They also have mechanisms that lock the lid in place. Presto canners use one style, All American, another. If you follow the usage guidelines of your model canner and NEVER leave it unattended you'll be fine.
FWIW, I've been canning since the early 1970's and have never had this even come close to being an issue. Never blown a safety release plug.
Go ahead and get your canner. To learn how to use it, follow the instructions in your canner manual to can some plain water, using meat broth guidelines. That will give you hands on experience without having to do any food prep work. Use the water for your emergency water storage, as sterile water for first aid, and/or to fill your canner when you can food, or water plants. It doesn't go to waste.
I'm sure your comfort level will go up considerably when those jars of canned water come out of your canner!
The baked beans you did yesterday were some I would like to do. I was going to copy the ingredients but there were none in the contents below. I had to stop in the middle of the video to go help my husband outside. This morning I was going to finish the video and It say it had been taken down. Went to my subscriptions and it was gone. I don't know if you tube removed it or you did or what happen but I would like to see the rest of the video.
