- Marry Me Pork
Ingredients:
Pork loin or chops (4 pieces, around 6 oz each)
Salt and pepper to taste
2 tbsp olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup chicken or vegetable broth
1 cup grated parmesan cheese
1 cup sundried tomatoes, chopped
1 tsp dried thyme
1 tsp dried rosemary
Fresh basil or parsley for garnish
Instructions:
Preparation:
Start by preheating your oven to 375°F (190°C).
Season the pork loin or chops with salt and pepper on both sides.
Searing the Pork:
Heat the olive oil in a large oven-safe skillet over medium-high heat.
Add the pork and sear on each side until golden brown, about 4-5 minutes per side. Remove the pork from the skillet and set aside.
Prepare the Sauce:
Lower the heat to medium and add the minced garlic to the skillet, sauté for a minute until fragrant.
Stir in the heavy cream, chicken or vegetable broth, sundried tomatoes, grated parmesan, dried thyme, and dried rosemary.
Allow the sauce to simmer and thicken for 2-3 minutes, stirring occasionally.
Bake:
Return the pork to the skillet, spooning some of the sauce over the top of each piece.
Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the pork is cooked through (internal temperature of 145°F or 63°C).
Serve:
Once cooked, remove the skillet from the oven.
Let the pork rest for a few minutes before serving.
Garnish with fresh basil or parsley.
Serve the pork alongside your choice of sides (roasted vegetables, mashed potatoes, pasta, etc.), spooning the creamy sundried tomato sauce over the top.
