Steaks too thick? After you sear them put the pan in the oven at 400-450 for about 10 minutes or to desired temp and you can finish them that way. Remember to pull them when they are 5 degrees below your desired temp as they will continue to cook. While the steaks rest on a plate, let the pan cool down so you don’t burn your garlic and other ingredients. Make your sauce, throw them back in to finish and you are done! I’ve tried doing it with the steaks whole and pulling them out and slicing them against the grain, plating them with my side dish then pouring the sauce over them. Both ways work great. Make sure the pan you are using is rated oven safe. This worked for me. Love your approach to cooking. I would never have thought to make this but it’s a regular in our house now. Thank you!

I'll have to try beef next. I tripled the sauce part. Loved having extra. Threw in broccoli & cauliflower. So awesome! Definitely gonna make this too. I was thinking while cooking chicken about using beef instead. Yum!
My mother in law always put butter on her steaks as the final step. Oh so good. Maybe cream would take its place, but butter is always better. My mother in law was a wonderful cook.

You could flour the steak before cooking..... flour is used all the time as a thickener!! Also, when making a light colored creme sauce like in the chicken recipe, you can use white pepper so it doesn't look like tiny black pieces in the sauce.... just a suggestion! I can't wait to try both the chicken and beef recipes!!! PS. If you use a lid on the skillet, things will cook more evenly and more quickly!!

You should have added a 1/4 cup of Shiraz wine to deglaze the pan, and add body to the sauce. You should have put the pan in the oven AT 360 F (180 C) to finish cooking the steak for 15 - 20 minutes, when it became obvious that the steaks weren't going to cook properly on the cooktop.

Looks like your sauce broke from cooking too long. Smaller steak yes also maybe popping steak in the oven to cook after browning while working on sauce in different pans. Then place steak in sauce for a few minutes. This is what top-line restaurants do. This does look amazing and going to try out myself.
I made my today with fettuccine also! Very good, just since nobody likes the basil I added spinach and mushrooms instead! Definitely should add more sauce🙄will make with steak soon with mashed potatoes or baked!

Made your marry me chicken last night. Was awesome. But it had different portions than this Steak one. Your chicken video used 1 cup heavy cream and 1/2 cup Parmesan. This video says 1/2 cup cream and 1/4 cup Parmesan. Intentional change? Thanks for the vids!!!
I think it may just be a smaller serving you could totally double all the sauce ingredients if you wanted extra sauce. I just pasted the ingredients in the description

Any steak over 120 is too done for me. If I don’t see some pink in the center, it becomes a treat for the dog. I would have deglazed the pan with some red wine and increased the cream.
I used to make a dish almost exactly the same with venison but lightly floured as marry me chicken....almost 60 years ago..can no longer hunt,..crap...

Another option for a thick steak would be to cook it longer before you take it out to make the sauce.
