Don't wash chicken with soap. And if you rinse it off, Pat it dry really good. If you put a damp paper towel underneath your cutting board it won't slip and slide. Always try to use a block of cheese that you shred rather than cheese in a bag because they add fillers to keep it from clumping. And if you need another eye on your stove just take the pan with the marinara and meat sauce and put it in the oven on warm while you're using that burner. And that's my advice for the day.😂 lol That recipe looks delicious I'm going to have to try it. And I know you're very busy and I appreciate the fact that you're still doing your cooking channel.
Dave, I am sooo impressed on how quickly you’ve grown as a cook. You are 100% correct that garlic burns fast then it becomes bitter. You knew not to cook it at the same time as onions. That is a sign of a good cook. You amaze me. Stop putting your skills down. You have improved immensely. And you’re also right about too much grease. Just a tip. 1 Tablespoon of grease is plenty left in any recipe. The rest should be removed. No roux for Alfredo. The cheese is your thickener. You just needed to cook it down a bit more. If you rub your hands on something stainless steel it will get rid of the garlic (and other) odor immediately. They do make these stainless steel bars shaped like soap to keep by your sink but anything stainless steel will work, including your sink. And you're kitchen skills and knowledge have noticeably improved!
Also NEVER have pasta waiting for sauce! If stove space is limited, make sauce first, put lid on it and cook your pasta - al dente. Then add pasta to sauce and it will bring it back to hot. And the bit of pasta water will help thicken the sauce.

Pasta dishes are my favorites and I've always made my own sauces - both red and Alfredo, so when I saw you make this I had to try it. I hate to say it, but I'm not a fan. It was almost too rich - I didn't like combining the two. Even though I live alone, my son and DIL live next door to me so I normally make big meals (they'll often come over and raid my fridge for leftovers too!), so it will get eaten. They loved it. But I'll stick to keeping them separate. I think this channel has become my favorite of your channels!

A wood cutting board would give you more control of your knife. For chopped garlic, smash the garlic with the flat part of your knife, then chop. Soooo much easier
If you prefer a sharp knife, you can preserve the edge by NOT using the sharp edge to move or scrape across the cutting surface. Instead, turn your knife over to the spine and move or scrape until your hearts content. You will keep your edge sharper, longer.

Yeah that's just weird to me using soap on chicken. I'm old school trained by my 50's housewife Momma & 30's housewife Grandma, and we all can our garden vegetables & sterilize everything. So here my thoughts on chicken. Always wash it good under luke warm running water, it should not feel slimy, if it does keep rubbing it under water. I only wear gloves if I have a cut on my finger, or get help to handle raw meat. I keep a separate cutting board for cutting meat & wash it with a scrub brush & hot soapy water when I'm done using it. Also I wash all my surfaces & hands before & after with hot soapy water when handling any raw meat, especially careful when handling chicken or pork. Also I use paper towels to dry my hands & surfaces because they get thrown away. If my husband is in the kitchen he'll use a towel, freaks me out, but I just throw it in the wash after he's done. I love his help but he makes more work for me sometimes. He does try my ways, he's just different. He's only made me sick once by not rinsing soap off my glass well enough, he was used to a dishwasher & not well water with a softener.

The USDA actually recommends not even rinsing raw meat because it can lead to more cross contamination.
Never wash chicken. The bacteria you will spread around your sink will contaminate everything and you'll give everybody food poisoning.
I saw a tip that if you put your cheese in the freezer for a little while before shredding it, it will shred easier and less messily.

Put the tomatoes in the pan as is and 'squash' with a potato masher - voila' crushed tomatoes!
Throw the mozzarella in the freezer while your getting thing ready just till it’s firm then quickly shred.
