    🥣 Bread ingredients:
    200g | 1 cup red split lentils
    50ml | 4tbsp water
    1tbsp oil
    20g | 4tbsp psyllium husk
    salt to taste
    1/2tsp baking soda
    1tbsp apple vinegar
    🥣 Mushroom pate ingredients:
    300g | 10oz mushrooms
    1 chopped onion
    100g | 1 cup walnuts
    15g | 2/3 cup fresh parsley
    1 or 2 garlic cloves
    120ml | 1/2 cup mushrooms stock
    salt and black pepper to taste
    ℹ️ With the ingredients listed in the recipe you get about 6 bread rolls.
    🧑‍🍳Cooking tips:
    ❗Feel free to add your best-loved herbs and spices to the recipe to get your favourite flavour.
    ❗Soak lentils for 3-8 hours [soaking helps it’s digestion and reduces cooking time]
    ❗For the bread rolls to hold together place rolls mixture to the fridge for 15-60 minutes. It works miracles and works like a binder 😊
    ❗If you don't have any psyllium husk powder or prefer to replace it, you can substitute it for chia seeds or flax seeds. Replace it with a equal amount of ground chia seeds or ground flax seeds
    🥣 Method:
    Rinse 200g | 1 cup red split lentils with water.
    Soak lentils in room temperature water for 3 hours.
    ℹ️ You can soak lentils overnight.
    To make vegan mushroom pate boil 300g | 10oz mushrooms in a lightly salted water for about 15 minutes.
    Keep mushroom stock for later use.
    Heat a little oil in a skillet.
    Cook 1 chopped onion stirring constantly until translucent.
    Set cooked mushrooms aside and let them cool down.
    Add cooked onion, 100g | 1 cup walnuts, 15g | 2/3 cup fresh parsley, 1 or 2 garlic cloves, 120ml | 1/2 cup mushrooms stock, salt and black pepper to taste to a food processor.
    Blend until smooth.
    Add finely chopped mushrooms and combine with the mixture.
    Garnish with pomegranate seeds and chopped parsley, set aside.
    Now we are back to making delicious lentil bread.
    Place soaked and drained lentils in to a bowl.
    Add 50ml | 4tbsp water and 1tbsp oil.
    Mash with a hand blender.
    Add 20g | 4tbsp psyllium husk, salt to taste, 1/2tsp baking soda, 1tbsp apple vinegar.
    ℹ️You can substitute psyllium husk for ground chia seeds or ground flax seeds.
    Mix well and set aside for 5 minutes.
    Shape bread rolls.
    ℹ️ With the ingredients listed in the recipe you get about 6 lentil bread rolls.
    Transfer to a parchment lined baking sheet.
    Spray with oil and garnish with sesame seeds.
    Bake in the preheated oven at360F | 180C for 25 minutes.
    Serve lentil bread with delicious mushroom pate and enjoy! 😋 👍

      Здравствуйте, скажите пожалуйста а псиллиум заменяет яйца, да. 1яйцо-это 1 ложка. Или я не поняла. Если псиллиума положить меньше, то подъёма такого не будет, да. Оно ложится для пышности или для чего? Заранее благодарю.

    I tried baking this today, and it was surprisingly good ❤️ I did a little twist using 50% psyllium and 50% chia seeds + a bit of honey and thyme. I also added oats because I put too much water in by mistake. Will make this again for sure

      @@mireafelder8194 it went very well - really satisfying, thank you for asking.
      There was a bonus, too - the mushrooms are gorgeous boiled! I did them again later with a little lemon juice in the water and served them sliced. I don't believe I'll fry mushrooms ever again plus the water makes tasty stock for stews. Sorted!! 🙂

      I don't know much about psyllium, but, yes, chia seeds are a good vegan substitute for eggs:
      1 egg = 1 tbsp. chia seeds + 3 tbsp. water@@nomecognome2341

      In gluten free baking as well as in vegan baking , psyllium husk acts as a binder - a substitute that holds the bakes together, gives them elasticity, extensibility and flexibility, and thus prevents them from being too crumbly.     I didn't have time to make the mushroom mixture yet but I tried the lentil bread. It came out a little bland and not much taste . It was still pretty good. I try not to use much salt. I want to try it again. Is there anything else that I could add to give it more flavor? I had it with hummus, tahina, and avacado.

      🥣 Bread ingredients:
      200g | 1 cup red split lentils
      50ml | 4tbsp water
      1tbsp oil
      20g | 4tbsp psyllium husk
      salt to taste
      1/2tsp baking soda
      1tbsp apple vinegar
      🥣 Mushroom pate ingredients:
      300g | 10oz mushrooms
      1 chopped onion
      100g | 1 cup walnuts
      15g | 2/3 cup fresh parsley
      1 or 2 garlic cloves
      120ml | 1/2 cup mushrooms stock
      salt and black pepper to taste
      ℹ️ With the ingredients listed in the recipe you get about 6 bread rolls.
      🧑‍🍳Cooking tips:
      ❗Feel free to add your best-loved herbs and spices to the recipe to get your favourite flavour.
      ❗Soak lentils for 3-8 hours [soaking helps it’s digestion and reduces cooking time]
      ❗For the bread rolls to hold together place rolls mixture to the fridge for 15-60 minutes. It works miracles and works like a binder 😊
      ❗If you don't have any psyllium husk powder or prefer to replace it, you can substitute it for chia seeds or flax seeds. Replace it with a equal amount of ground chia seeds or ground flax seeds
      🥣 Method:
      Rinse 200g | 1 cup red split lentils with water.
      Soak lentils in room temperature water for 3 hours.
      ℹ️ You can soak lentils overnight.
      To make vegan mushroom pate boil 300g | 10oz mushrooms in a lightly salted water for about 15 minutes.
      Keep mushroom stock for later use.
      Heat a little oil in a skillet.
      Cook 1 chopped onion stirring constantly until translucent.
      Set cooked mushrooms aside and let them cool down.
      Add cooked onion, 100g | 1 cup walnuts, 15g | 2/3 cup fresh parsley, 1 or 2 garlic cloves, 120ml | 1/2 cup mushrooms stock, salt and black pepper to taste to a food processor.
      Blend until smooth.
      Add finely chopped mushrooms and combine with the mixture.
      Garnish with pomegranate seeds and chopped parsley, set aside.
      Now we are back to making delicious lentil bread.
      Place soaked and drained lentils in to a bowl.
      Add 50ml | 4tbsp water and 1tbsp oil.
      Mash with a hand blender.
      Add 20g | 4tbsp psyllium husk, salt to taste, 1/2tsp baking soda, 1tbsp apple vinegar.
      ℹ️You can substitute psyllium husk for ground chia seeds or ground flax seeds.
      Mix well and set aside for 5 minutes.
      Shape bread rolls.
      ℹ️ With the ingredients listed in the recipe you get about 6 lentil bread rolls.
      Transfer to a parchment lined baking sheet.
      Spray with oil and garnish with sesame seeds.
      Bake in the preheated oven at360F | 180C for 25 minutes.
      Serve lentil bread with delicious mushroom pate and enjoy! 😋 👍

    Oh my goodness, both recipes were perfect timing for me. I need to up my protein and calorie intake according to my surgeon, and it can be tough if you’re a vegetarian in an omnivorous family. Only one child likes lentils and beans, so I just didn’t tell anyone what was in the dinner rolls. They were all eaten, but I think some might have suspected I was up to something. I don’t normally hide ingredients, as I don’t think it’s fair, but I really need to get protein where I can right now. Next time I’ll come clean and happily eat the rolls myself if they get rejected.
    The pâté was delicious too! It was nice and light and not at all dry or grainy. Have you seen the video or read the recipe for vegan foie gras that gourmet chefs have declared as good as the original animal-based recipe? It was one of those culinary chemistry things but the only odd ingredients were the two gellan gums for consistency. I have never eaten real foie gras in my life, so I have no idea what it is supposed to be like, but if actual professional cooks have declared it just as good (or even better) than the version from tortured birds, I’m going to believe them. Sorry, I know that’s not relevant to your pâté, but I’m curious if experienced vegan home cooks have made it, and if so, what they think of it.
    Have a happy Christmas! My children are home from college now, so we are enjoying our time together. One son departs for Northern Europe in less than a month as a study abroad semester, so it’s been busy getting all his paperwork and packing ready to go. He’s organized though, which is great. I’m…less organized.

      My 88-year-old mother who isn't vegan or even vegetarian was told that she needed to up her protein intake--her doctor recommended a daily protein shake. I've been vegan for over 30 years and though I have never been diagnosed to be low protein, low iron, etc., decided to have a protein shake each day with a cup of almond milk--it's so easy to get an extra 25 g or so of protein per day that way. As a bonus, it tastes like strawberry Quik from my childhood. 😋

It isn’t hard to find enough protein in a normal plant-based diet despite what some people insist on believing, but when you’ve been told to add significantly more to your diet, it can get monotonous or complicated. And if you’re already struggling with exhaustion, cooking and planning meals is even harder.
      Thank you! I’ll try protein powder in almond milk too. I’m not a fan of dairy, coconut, soy, or oat milk, but I love almond milk. The premade drinks like ensure or boost taste terrible in my opinion, so I haven’t been keen to try liquid protein options. But yes, who doesn’t like strawberry milk?

      Yeah, it's funny how often while doing vegan outreach people will ask me, "Where do you get your protein?" 😄 I think the animal agriculture industry has done a good job of scaring people into thinking they can only get protein by eating animals' flesh.
      And I'm in agreement with you regarding non-dairy milks--almond milk is the way to go!

      @@WeCookVegan I did find a recipe that simplifies the food chemistry version with the odd gums. I have not made it yet, but it might be a fun rainy Saturday project just to satisfy my curiosity.
      I list it here, because YT does not always like it when someone posts links. Credit should go to @ChefSteps for the original recipe, and then @Sauce Stache for the simplification shown below.
      Foie Gras:
      150 g Cashews, soaked in water overnight
      85 g Coconut oil, refined
      90 g Shallots, thinly sliced (2 medium shallots)
      50 g Button mushrooms, cleaned and sliced
      12 g Garlic cloves, thinly sliced (2 cloves)
      70 g Madeira
      40 g Cognac or brandy or bourbon
      275 g Water
      25 g White miso paste
      15 g Tomato paste
      2 g Black strap molasses
      .5 g Yeast extract
      8 g Kosher salt
      2.5 g Sweet Spice, (1 teaspoon)
      1.5 g Black pepper , freshly ground
      1.5 g Tapioca starch (optional)
      1.3 g Agar agar
      .6 g Xanthan gum
      .5 stick Vegan butter (optional)
      Sweet Spice:
      40 g Star anise
      16 g Ginger, dried
      12 g Vanilla bean
      12 g Black pepper
      12 g Cinnamon
      10 g Orange peel, dried
      6 g Nutmeg
      Make the sweet spice by grinder all ingredients to a fine powder in a spice grinder. Sift and grind again for 100 percent yield.
      Store in an airtight container and reserve in a dark place.
      Soak cashews overnight. You can measure out some of this water for the recipe later.
      Slice up shallots, mushrooms, and garlic.
      Add 1-2 tablespoons of the coconut oil to a saucepan on low heat, let it melt. Add shallots, mushrooms, and garlic and sweat until translucent.
      Add liquor and rest of ingredients except binders (starch, agar agar, and xanthan gum). Bring it to boil, and then simmer for about 10 minutes.
      With an opening in a blender, add your mixture and blend at a low speed. Add the agar agar, gums and blend at higher speed, until bubbles start popping through the top of mixture.
      Add mixture to jars. Melt vegan butter and pour over top of your mixture (optional).
      Refrigerate for a few hours to firm up.
      Use within a couple days or freeze for later.

      I used red split lentils (I buy them in Indian grocery shops and market as you do). If yours are red in colour they should be the same or similar and will be a perfect fit for the recipe!

Si no tienes cáscara de psyllium puedes sustituirla por semillas de lino o de chía. Para una receta que requiere, por ejemplo, 1/3 de taza de fibra de cáscara de psyllium en polvo, 1/3 de taza de semillas de chía molidas o semillas de lino molidas funcionarán. ¡Espero que lo disfrutes!

    What does the Apple cider do ? Does it help get rid of the husk slime?

      When vinegar reacts with baking soda, it creates carbon dioxide bubbles, which act as leavening agents. So as the batter bakes, these tiny bubbles expand, causing the bread to rise and giving it that light, airy texture we all enjoy.

      🥣 Method:
      Rinse 200g | 1 cup red split lentils with water.
      Soak lentils in room temperature water for 3 hours.
      ℹ️ You can soak lentils overnight.
      To make vegan mushroom pate boil 300g | 10oz mushrooms in a lightly salted water for about 15 minutes.
      Keep mushroom stock for later use.
      Heat a little oil in a skillet.
      Cook 1 chopped onion stirring constantly until translucent.
      Set cooked mushrooms aside and let them cool down.
      Add cooked onion, 100g | 1 cup walnuts, 15g | 2/3 cup fresh parsley, 1 or 2 garlic cloves, 120ml | 1/2 cup mushrooms stock, salt and black pepper to taste to a food processor.
      Blend until smooth.
      Add finely chopped mushrooms and combine with the mixture.
      Garnish with pomegranate seeds and chopped parsley, set aside.
      Now we are back to making delicious lentil bread.
      Place soaked and drained lentils in to a bowl.
      Add 50ml | 4tbsp water and 1tbsp oil.
      Mash with a hand blender.
      Add 20g | 4tbsp psyllium husk, salt to taste, 1/2tsp baking soda, 1tbsp apple vinegar.
      ℹ️You can substitute psyllium husk for ground chia seeds or ground flax seeds.
      Mix well and set aside for 5 minutes.
      Shape bread rolls.
      ℹ️ With the ingredients listed in the recipe you get about 6 lentil bread rolls.
      Transfer to a parchment lined baking sheet.
      Spray with oil and garnish with sesame seeds.
      Bake in the preheated oven at360F | 180C for 25 minutes.

    Oi, estou fazendo o pãozinho, mas se me permite 2 sugestões... 1) Deixem de molho por mais tempo (talvez de 4 - 5 horas
    2) Usem, para preparar a primeira parte da massa (a lentilha com a água e o óleo), um processador potente. (O mixer o meu tem 300w e começou a esquentar muito. Para evitar o curto-circuito no motor, fiz o resto amassado com uma colher e ainda ficaram grãos da lentilha sem ficar prensado. Ele não tem potência suficiente).
    Fiquem atentos ao vídeo, pois é orientado que se aguarde 15 minutos antes de começar a modelar e na tradução para meu idioma - português, ficou 5 minutos

    Oi, estou assistindo seu vídeo do Brazil (Teresópolis - RJ). Já deixei a lentilha de molho. Como sou diabética, preciso cortar muitas coisas. Mas como amo pão, tenho pesquisado opções. Vou testar a sua receita e ver como a minha glicemia responde (se vai subir e quanto). Se der tudo certo, vou passar a fazer mais vezes. Posso congelar os pães para ir comendo aos poucos?
