Everclear is perfect for infusions and draws out a ton of flavor but you do need to mix it down to a reasonable proof afterwards. It's sold as an unfinished product for a reason.

I honestly have to ask, are you diluting it down at all? I’ve made infused spirits with everclear and that cre8 vodka mix, but I’ve always diluted it down to 40% at the end and it’s come out okay.
