    Ryan's Super Spicy Sri Lankan Prawn Curry
    For the Sri Lankan curry powder
    1 tsp basmati rice
    2 cardamom pods, extracted seeds
    1 tbsp cumin seeds
    1/2 tsp black peppercorns, crushed
    1 tsp black mustard seeds
    1/2 tsp whole cloves
    2 tbsp coriander seeds
    1 tsp fennel seeds
    For the curry
    1 tbsp home made Sri Lankan curry powder
    15-20 uncooked large king prawns, de-shelled, deveined (keep the heads)
    2 tbsp rice bran oil (or any cooking oil)
    1 red onion, diced
    1 tbsp garlic, minced
    1 tbsp ginger, minced
    1 tsp cayenne pepper
    1 tsp paprika
    20 curry leaves
    1 cup coconut milk
    1 tbsp tomato paste
    1/2 tin diced tomatoes
    1 cup chicken stock
    1 cup water
    1 tbsp chilli paste
    1 Lemon juiced
    1 tsp sugar
    1 cinnamon stick
    To garnish
    10 Coriander leaves
    To serve
    Sri Lankan yellow rice
    Papadums
    1: To make the Sri Lankan curry powder, add all the spices to a pan on low heat, and toast for 5 minutes, until aromatic.
    2: Add the spices to a mini blender (I used a Nutri bullet), and grind until a powder forms. Add to a bowl and set aside.
    3:Place a pan on medium-high heat then add the rice bran oil. Fry the prawn heads for 8 minutes until all the juices come out and the pan turns orange. Lower the heat to medium.
    4: Add the red onion, garlic, ginger, cayenne pepper, paprika, and Sri Lankan curry powder to the pan, then stir and cook until fragrant, approx 5 mins.
    5: Next add the curry leaves, diced tomatoes, chilli paste, tomato paste, water, chicken stock, and lemon juice to the pan. Stir to combine.
    6: Add the stick of cinnamon and sugar, stir once more, then allow the curry to simmer and reduce the liquid until thick, about 15-20 minutes.
    7: At the end, drop the uncooked prawns in to the curry and let them cook for about 2-3 minutes until they turn orange.
    8: Add the curry to a large bowl to serve and garnish with fresh coriander leaves to finish. Serve with Sri Lankan yellow rice and papadums to get the full experience.

      @@kuoneli I know what he mean’t and of course he gave her a nine; he’s the only non-Southeast Asian person on the video meaning the least capable of making something traditional. He just sounded stupid making suggestions where they’re not needed. Egg curries are one the most delicious, simple and traditional dishes across the Subcontinent.

    As an Indian, who has curry for lunch EVERY. SINGLE. DAY. (Not complaining, btw; curries are freaking delicious!) I can say Ismat knows her food. Her flavour profile is similar to mine.

    1. Curries don't have to be spicy, spice levels aren't "incorrect" because they are low.
    2. Curry is just one name given to a plethora of southern asian dishes, so it would be nonsensical of they all tasted the same a and were all equally spicy

    Nathan is always overly critical and his food never delivers what he demands of the other competitors. That aside, I appreciate the fact that the other chefs are honest enough to give fair feedback on their fellow chefs' meals.

    After watching this video I google radha and found a post on Instagram talking about her horrible disgusting experience of racism, I thought Singapore would be a bit better than that, treat Indians with so much Hate for no reason, I wish Radha could be at a place where she feels loved and is appreciated not treated like crap. I think a drag queen that cooks yummy curry is so awesome. Thanks BuzzfeedOz for introducing me to Radha. I only hope to have as much confidence in myself like drag queens do.

    im gonna be controversial for a moment and say that curries do not *need* to be hot! heat can be great in certain curries but others are better with a milder profile that lets the veg/protein and other spices be the showcase. even though my spice tolerance is high i prefer fragrant chilis to spicy ones because the heat doesn't distract from the other flavours

      I agree. I'm from the Philippines and we do not have much spice/curry-heavy dishes. So when I was in Singapore on a holiday, I tried the fish head curry. I was worried that it would be hot and spicy. It only smelled spicy but the taste was not hot. I enjoyed it.

      Nathan (he was the third chef). He's probably the harshest critic and easily the worst chef yet they keep bringing him on. I don't mean to be mean but his curry looked like it was made by someone whose never made curry before

    This is the best version of people try each other food. Everyone was reasonable with their scoring, gave actual feedback and told us what they were tasting perfectly. PLUS the diversity is amazing!

      I really don’t understand why they don’t just have them rank from best to worst/worst to best, instead of giving points out of 10. I’ve seen so many comments about this across their videos, especially when it seems like someone purposely lowballs everyone else’s scores and wins because of it.

      @@ococcats That way you could still end up with multiple dishes being ranked 'best' by someone and 'least favourite' by others...leading to the dish most people thought as 'average' winning the whole thing. I think best would be to have an outside judge rank them. Although I don't think any of the other 3 chefs are biased unlike many other people who participate in this format.

      Bruh she was born in Colombo. She's Sri Lankan by birth if not ethnically. This is the same as calling Asian Americans not American because they're ethnically Asian.

    From the ingredients and way of cooking I would rank Radha's first, Ryan's second, and Ismat's third. The other one.... Emmmm doesn't seem like curry to me. I laughed when Radha said it tasted like chili crab sauce..😂

    As a culinary student, my instructors teach that a curry should: have a bold color, fragrant aromas, and rich complex flavors that burst all over the tongue, with heat levels varying.
    P.S. Indian & Pakistani peoples, Dum Aloo makes me want to teach the whole world to sing. Yum! My favorite! 👏🏻👏🏻👏🏻🥇🏆

    Radha's was hands down the best. As a Tamilian I vouch and swear by those flavours ❤️❤️
    The indigenous chef was way too salty, and comes across as insecure in every one of his critique. While his dish itself is the most generic of them all

      This is the second time I've seen him in one of these cooking videos and he just never compares to the other chefs. It has me wondering why he is included.. no offense but he is not of the same ability or caliber as the other chefs in my opinion. I don't know much about him so I will check out his TikTok but as of now I'm unimpressed.

    As an Indian I would prefer Radha's Aata curry over Ismat. I have never eaten a weird combination of potato and egg all my life :P The way he has cooked the dish was quiet similar to any of the south indian dishes, looking at the recipe i can clearly tell its going to be a balanced spicy non vegetarian curry!

    I don't have much experience with curry (maybe just Thai curry), but that prawn curry and goat curry looked AMAZING. You can tell they're also amazing in taste. They should've tied at the 1st place.

    I'm mostly white and western, but curry in all its forms is my favourite dish. It's so flavorful. I try to cook it myself from spices rather than pre-made jars.

    I’ve never had Indian Curry before(I hope I used the proper term). I’ve only had Jamaican curry like curry shrimp. But this video made me want to try some! So much flavor goes into each dish.

      Probably a bit similar sinceJamaican curry was made by Indians who were brought over to Jamaica by the British. A lot of Jamaican cuisine and African cuisine from different countries like Kenya are heavily inspired by Indian cuisine, cuz of Indian labourers being brought over. I don’t know how people don’t know that.

    Ismat's recipe (as much as Im sure the dish tasted good): Why would you use anything other than red onions and actual green chilies used in curries?! Dear God.
    But Ryan's recipe with the home made garam masala (or maybe he made curry masala..idr) and the curry leaves..🤤

      But, to me (personally), the authenticity of the dish disappears. Perhaps that's just me. As a chef and as an Indian myself it saddens me to see dishes sold as Indian (at restaurants..im not refering to the video or the dishes the chefs on here cook professionally either) not taste remotely so all thanks to a few ingredients that aren't used in Indian cooking. But, again, like I said this is my personal opinion and while I failed to clarify that in the original comment I did say I'm sure her dish tasted good!
