    I luckily LOVE cottage cheese. I eat it plain,
    I eat it with canned and fresh fruit,
    I eat it with sautéed, seasoned veggies AND AS A DIP for crudités ‼️🍧🍨🍦🍓🍇🥕🧄🫑
    I absolutely CRAVE ice cream…(strawberry at the moment).

    The texture may look fine after 3 hours but if you freeze that overnight you will have a hard chunk of strawberry ice. Xanthan Gum is needed so that it will stay spreadable no matter how long it is frozen.

    When you make ice cream, the cold reduces the sweetness and flavour so make sure you use plenty of fruit and sweetener. A lot depends on the quality of the fruit.
    You can always make a fruit syrup and strain it to remove the seeds/pips. Freeze that in ice cube trays and then use these in your blender with cottage cheese to make instant ice cream with no nasty bits.

    I was trying to make cottage cheese ice cream and stumbled on something, to flavor it used a package of "Sugar Free" Pudding. 16oz cottage cheese, 1 cup water, 1 packet sugar free pudding, blend it together. Didn't need any additional sweetener.

    I love this! I'm not surprised cottage cheese makes a good ice cream base. The premium ice cream brand Jeni's uses cream cheese for some flavors (with tons of sugar of course) and blended cottage cheese is kind of similar.

      I’ve seen a lot of people use the good culture brand of cottage cheese because it is the lowest in carbs. But pricewise I use the Aldi brand like she showed.

      That’s EXACTLY what I was thinking! You could fold in some chopped strawberries at the end. Whatever size strawberry somebody wanted. 👍🏻👍🏻👍🏻 Seems the premium type ice cream has bits of strawberry in it. ❤. My favorite ice cream is actually mint chip but this looks delicious.
      I like strawberries or berries of any kind, and it wouldn’t hurt me to lose 50 pounds. 😢😮

    I think if you stirred it several times during the freezing time, that would help. Also, another person said if you put a very small amount of vodka in it, that helps it to keep from getting icy.

    I have heard people say it's a bit sour tasting (due probably to the liquid whey) so I decided to drain off the whey overnight in a sieve over a bowl. OMG!!! It worked very well !! So if any of you get that tangy taste, all you have to do is drain off the liquid. I don't think it would take overnight, but that's what I did and it drained off the whey very well. I didn't toss the whey because it's good for when you're making biscuits or some other bready recipe.

    I made ice cream using sour cream, vanilla protein powder, coconut milk, and Teeccino Mushroom Adaptogen Coffee Alternative - Turkey Tail Astragalus Toasted Maple - Caffeine-Free Mushroom Coffee (!) I know right …. then once I turn it in the ninja creami I add half and half. Today I added frozen cherries…was so good.

    I made this today. Wow! It came out delicious! No trace of cottage cheese. I added 1/4 teaspoon of vanilla paste and fresh strawberries before I processed it in my food processor. Froze it, and it’s delicious. I used monk fruit as sweetener. Thank you for sharing the recipe 🙏

    I tried this and liked it but not sure if I'd make it again soon. It was a delicious treat but I don't typically eat that many berries too often. I used a mixed berry blend (frozen).
    And, I really love ice cream made from Keto Chow so I would probably be inclined to use that method for less carbs and closer to Carnivore.
    The taste of this reminded me of berry Cheesecake. 😊

    Would this work with high-potency PURE stevia powder? And what could we use in place of strawberries if we want to make it even more low-carb? (Also: I think a pinch of salt would be great here. It would heighten the sweetness, plus it would help mitigate crystallization that often occurs in homemade ice-creams.) Thanks!

      Try a strawberry extract or any fruit extract and use a chilled avocado in place of real fruit!

      You probably don't want to add any salt. Cottage cheese has a good amount of sodium already.

      Hello HappyBee. After freezing overnight, it was definitely solid. I ended up letting it sit on the counter for about 10 min and then I was good to go. Since then, I made a peanut butter cup recipe that I will be sharing with you soon.😋

    I had to add a splash of milk to mine. Maybe it's my blender but the ingredients didn't mix well because it was too dry. I'm hoping it sets up. It tasted wonderful before freezing!

    Used homemade cottage cheese from our raw milk....added some more heavy whipping cream back in, a little redmon salt, unflavored protein powder, vanilla extract, Swerve.....so good.....

      Protein deficiency is rare in this country. Unfortunately many high protein items, especially fast foods, are also high in bad fats. The cottage cheese provides adequate protein.

    I made it two weeks ago, but since learning that most of the sweeteners for keto use can cause the body to crave more and more of (them), as well as causing very painful GI problems, I decided to just stop all keto desserts.
    Amazingly, the very painful GI issues I'd been enduring for the last 4 1/2 years stopped within two days, and haven't returned.
    All I did was give up the sweeteners and greatly reduce dairy---I knew how to make keto ice cream before the cottage cheese version came along---and the painful issue went away. I like ice cream hugely, but I'd rather be free of the pain than to have that wonderfulness.
    I wanted to put this out here just in case anyone else is having issues but didn't know why.

      That's a good idea. I was thinking using dried strawberries from the freezer, but getting the moisture out of the cottage cheese would help too.

      @@Fudgeey I haven't tried this yet, but it's awesome. I will incorporate all dairy in my ice cream, too. A blend might be nice. This is exciting news especially since summer is coming. If we go even further with raw egg yolks, we can make ice cream a meal. (I have made ice cream with raw eggs before, and I never got sick.)

      @@GetFitWithDeborah I hope so. I know that you can make Greek yogurt by draining regular yogurt through a coffee filter/sieve. It would remove protein, though, the whey, and leave more fat. That is what I am after. I would like to try ricotta cheese as an addition or by itself. I would also drain that first as well. If you have a dog, they would like the whey, I think, so it doesn't go to waste. Good luck with this.

    How does it store in freezer? It is wet so will it eventually harden so bad that you can't scoop it out? Its to soft to use right away and as my home made ice cream recipe will harden like a brick so it can't be stored, I fear this will too.

      It did get hard overnight. But I let it sit out for about 10 minutes and had no problems with scooping it and the consistency was creamy.

      You could try half Greek yogurt and half cottage cheese. You would be adding the tangy element of yogurt, so be aware the flavor profile will change, but the protein will still be there.

      Overnight it did get hard. I let it sit out for about 10 minutes and I was good to go.

    I ust ordered 2 bags of 340g Allulose, came to 21 and some change. But its organic or non-gmo. I tried a different one before thatwas not, and it seemed to sting my mouth a little in a chemical way i cant really explain. So i hope this new stuff is different.

      Allulose has been the only sweetener that I use for 'ice cream' that does not make the ice cream hard for what seems like days. I still have to sit it on the counter but for only for a few minutes vs Erythritol sweetener

    Did you use 4%, 2% or fat free cottge cheese?

      For Keto the 4% is best, but 2% is okay. Just check the labels to be sure they're not sneaking junk in there.
      I found the "lower lactose", higher fat Cottage Cheese has the least carbs (likely because the whey's strained off for longer).

    Hi, in the video you have 1/3 cup of sweetener and 3/4 cup of strawberries. In the written part it says 1/2 cup of sweetener and 1/2 cup strawberries. Which is right?

      You don't need to add it. It can be good for someone that has trouble meeting their daily protein targets
