I made this pie yesterday for the first time. I found juicy limes in the grocery store, used a juicer, and it was a breeze to get 1 cup of lime juice. After it baked, I chilled it overnight. Took it out this morning, made the topping, and it's heaven!! Perfectly tangy, not too sweet. The whole pie came out perfect in my opinion. I love everything about it. Only problem is I made it and had 2 people over for a slice, but they're gone, and now I'm alone with about a half a pie left. So, guess who is going to be going to the fridge every 30 minutes and taking another bite of pie until it's gone?!! Thank you Alison, this is a great recipe.
Oh my, this is my husband's favourite so he's a connoisseur of Key Lime Pies. I really, really hope I can try this out once or twice and then triumph by baking THE BEST one he's ever had in his life. It’s the fact that Dill-bert still exists and shows up a tiny bit that makes it funnier lolol and also, never tasted a key lime pie before, or any kind of acidic, soury type of pie, but looking at this recipe, you know what, i’m gonna just do it this weekend. Made this last night and that yogurt-whipped cream was genius and delicious! It cuts the sweetness of the filling and gives much refreshing taste to the pie! I’ll definitely make this again

for anyone that's curious...if you really want to go for the bottled stuff use Nellis& Joe's key lime juice. I use it at the restaurant I work at for desserts and it's great, it doesn't taste fake or anything

I made this pie for Christmas dinner and it was amazing - and vanilla wafers worked as a great substitute for graham crackers. Also added more lime zest on top. It was easy and fabulous.
Thanks for the in-depth explanation about the size of the crumbs for the crust. I made a lemon cheesecake for Easter and I was really bothered by the texture of the crust but couldn’t figure out why. I used the food processor to break up the crackers. The crust had an unpleasantly sandy texture in my mouth. I thought I was crazy but I know know what the problem was. The crumbs were too small. I am going to make this pie this week by hand using your suggestions. Dessert shouldn’t be complicated and I really don’t want to drag out the appliances for this one. Thanks!

Hope stay dry with Storm Henri bringing Caribbean rain. . .beautiful looking ring on crust and whipped cream idea. Key limes are more yellow and if can get, those are the best. Should try cast iron pie plate for collectible fun, really nice crust too.
Alison, you can briefly microwave your limes to get more juice. Also a good reamer helps. Reamers are fun because you can brandish it menacingly at people when they come into the kitchen to mess up your vibe.
I loved the addition of the yogurt in the cream as well as the suggestion of labnah. It made me think of my favorite cheesecake that I can't figure out. Tangy dry and a bit crumbly, no crust. I LOVE a creamy one too but, Canters in LA makes one like no one else. If you have some ideas on how to make it please tell. 🍒
Making this weekend, but you definitely need a reamer for those limes. Makes it much easier. I have a wooden reamer that must be 25 or more years old. Love it! You need it when your making homemade margaritas....which I also might make this weekend!🏝

All hail the Pyrex! I grabbed one for $2 (! I know !) from my local grocery store at Thansgiving because I *needed* a pie dish. It looks pretty underwhelming but I've used it for a million pie and (un)official pie things since. Love it.
Once when I was working as a back bartender a manager accidentally ordered two cases of limes instead of one. Management was afraid these limes would go bad before we could use them so they had me juice over 200 limes by hand for an entire day. It was truly a nightmare and I wouldn’t wish it on anyone
Fantastic recipe! I have a bunch of lime curd that I bought from a specialty shop. Any thoughts on how to use the lime curd for this recipe? I'm not even sure I know what curd is or how it compares to the ingredients listed for your pie…
Alison, what are your thought in adding pulsed rolled oats to the graham crust, or perhaps a Lotus Biscoff crust?
I always use Biscoff since I can never find graham crackers in Singapore.

Our "house" crust uses ginger cookies- try it.
Another good choice is a Lorna Doone or other shortbread cookie brand crust!
