Hot tip from a home baker - buy clear plastic shower caps at the dollar store to cover your dough bowl. They’re cheap, way easier than cling wrap, and have a perfectly sized elastic built in which wraps itself around the bowl. Reusable too!
I just made this pizza and here are my notes: 1. The tomatoes are the signature ingredient so get the best you can. My personal favorites are Sclafani. Yes, they are from New Jersey, but so is Bruce Springsteen. 2. The amount of olive oil you put in the pan can be an issue. I put in a bunch and I had to pour off some before I could de-pan the pizza. The crust was fine, but next time I may put in a "Heavy Coating" rather than "Reflecting Pool" quantities. 3. Cooking time is dependent upon pan size. I used a larger pan than Alison so mine cooked quicker; about 35 minutes on my oven's upper grate. Watch yours closely the first time out. 4. Alison's online recipe differs from this in that she uses olive oil in the dough. I followed this recipe and it was just fine. The crust must have absorbed whatever it needed from the pan, Other than that, magnificent! I can finally make Sicilian at home!

I’m certain the bad rap that anchovies get is due to encountering dry overcooked ones on pizza that make the whole thing taste like a rusty nail. Also I’ve made a sheet pan pizza similar to this before and it was a hit; this recipe boils it down to the essence beautifully so next time will be even easier!

Hello! In the written recipe, it says to divide the dough in two to make two sheet tray pizzas (no size specified). But in the video, you say the dough makes a 1/2 sheet tray pizza. Just confirming whether or not the dough recipe makes two 1/2 sized sheet pan pizzas or if it's one 1/2 sheet pan pizza.

I made this today once by making the doe in the morning (with off yeast) and once in the evening an hour or so rest time. Both were fabulous it’s such a great recipe, I halved it too also worked perfectly
Having just gotten back from Italy, I found that most places had very thin pizzas, not greasy like so many of ours. The crusts were usually puffy, light and large with great taste. Oh, and Alison, I went to high school with your mom, such a funny, intelligent woman. Glad to see you're back in the public spotlight.

@@borntoexplore982 It's okay, I knew it was fake. Just like my first trip to Mexico, only to realize our idea of Mexican food is not the same as in the States. And then Tucci's Discovering Italy show on CNN also inspired our trip. We were all over, Milan, Rome, Venice, Lucca, Modena and Florence. We did not see a lot of meat with pasta. That was the big surprise for me. Also stay away from the most obvious tourist restaurants, as they are just catering for the tourists, not the Italians who actually live there.

Hi Alison! Love your videos but this one is confusing to me and I want to get it right since I have failed with pizza dough one too many times! The written recipe is different from what you do in the video. The recipe says to split the dough into two yet you make one pizza only in the video. The recipe also says nothing about the dough sitting overnight in the fridge but instead to leave out for a period of time then move onto the next step - which is also confusing because it says to flour a board and knead the pizza instead of just punching it down and folding it into itself like the video. Can you please clarify?! Thanks!
Hi! I had this exact same question, and I just did it like the video said. If you split the dough, you have thinner pizzas which are fine if you're into that. This version shown is a grandma-style pie, which is kinda like foccacia in texture (i.e. doughy but with air pockets that make it light). Don't split the dough and do an overnight rise, and you'll end up with a chewy, delicious pizza like in the video!

I never knew. I like anchovies but the few times I put it on pizza it was like eating a salty can. Definitely going to try it again after next time.

Call it a granule of flour. Also, a simple formula for dough is 5:3. Five oz by weight of flour to 3 oz by weight water plus yeast.
