    I watched this video while eating the tuna salad salad and some salt and peppered toast. I’ve never made a cheesecake because who has time for a water bath? Thanks for once again being the way and the light.

    I made this recipe out of your cookbook and it turned out to be the best thing I have EVER baked. You made me feel like the best Chef in all the land! 1000/10 best cheesecake award!

      Lol, the worst lactose-intolerance-related pain I ever experienced was due to cheesecake. That was in 1994 & I still remember it. And I agree, it was 100% worth it!

      Philadelphia is available lactose-free, at least here in Germany. So you might also find that in your supermarket.

    What I like the most about this is, despite being sponsored, the product is not being rubbed in our faces - the same way other youtubers do with their sponsored content. No blocks of cream cheese on display in the background/table. No exaggerated descriptions/praise for the product. Just quality cooking! Love this channel since day 1! 💗💗

    OK this really hit a nerve. Cheesecake is effectively THE dessert in the world. Learned to make it from Suzie Feingold's mom who always had one on the go, usually with cherry sauce "on the side." At Suzie's house you could eat cheesecake any time. At my house you had to be going out to a "fine restaurant" [read steakhouse] in downtown Philadelphia and beg for dessert. My goal in life was to be Suzie's Feingold's mom and eat cheesecake three meals a day. Fast forward to some years later when I married and -- wait for it -- moved to Europe where there was NO cheesecake at all. No graham crackers either. I tried to explain Philly creamed cheese in a grocery store and the manager turned green. THE SECOND I could find out where to get Philadelphia creamed cheese AT ANY PRICE, I bought it and turned into Mrs. Feingold. If I had to get a second job -- who cares, I had the prize in the oven. I've vetted dozens of kinds of cookies to make the crust and, now and then, invest in a scorchingly-expensive box of graham crackers from Amazon. This is the food of the gods, no mistake. I've got the T-shirt -- Eat cheesecake. Wear Spanx. Live happy.

      I used to live in Turkey and made cheesecake by myself all the time. They sold it there, it just wasn’t very good. I used labne. I’m sure you could make it wherever you are in Europe with enough creativity. I also made mango cobbler when I lived in Vietnam cause I couldn’t get peaches. Get creative. It’s what expats have to do when they miss food from home.
      Also, you can make labne at home by straining Greek yogurt overnight. Js.

      @@Darmok_onthe_ocean It's got to be Philadelphia creamed cheese and the longer we live here, the more it's available in shops. We've lived in a couple countries but here in the UK they have more American products. We went through years paying the earth -- but it's getting better!

      @@TheBLGL The first ten years were rough! We were everywhere from Spain to France to Estonia. But now we're in the UK and I've gradually got more sources for Philly creamed cheese -- partly by telling people what they're missing and partly because we ultimately moved to a country that had better ties with the USA. In the last couple years Philadelphia creamed cheese is available in Tescos -- a major grocery store. I still can't get graham crackers though and since we're in the UK use digestive biscuits which are pretty good.

      What id like the track down is the firm Philadelphia, that’s wrapped in foil, like a block of butter would be, is that the Philadelphia you’re talking about?

    Tips for lazy people like me: I bake anything with graham cracker crust in a cast iron skillet so I’d warm the butter in the skillet then dump the crushed crackers in and mix it all in there. No extra pot or mixing bowl!

    Thanks for this recipe, Alison. I made it for Easter. I have a 10' pan, so I used both packages of Graham crackers and 8 Tbsp of butter. They were a bit crumbly, but still very delicious. Hubby loved it and my coworkers, too!

    Ooh I'll definitely be making this! The idea of a water bath around it always freaked me out and kept me from making cheesecake. But this is so easy and it's my fave dessert so I should just give it a go

    Awesome recipe Alison, just in time for Easter dinner. My family makes cafe cheesecake, it's baked in a water bath, it's part mascarpone cheese. We go to extremes, Curatelle (Italian Haggis) with a fluffy cheesecake with ice wine for dessert.

    Yum! I’m trusting that this’ll be delish. I have some Philadelphia cream cheese that was meant to go with lox, but your cheesecake came first. Edit: I’ve just made this for the fourth time, as a gift. It’s a delicious winner! Thanks Alison!

    This came out DELICIOUS!!! Was a huge hit! I made it for a small gathering which I have to say is SUPER nerve wracking to make something new for a group. Everyone raved about it! Even some of the guys asked how I got to taste so orangey! It all came together really fast! I was able to start it at 12:30pm, it was in the oven by 1:05pm and then in the fridge by 3pm and was totally chilled by dessert time! I only have a 10” springform, which I feel made it faster to chill… but I’m thinking of making it 1-1/2 the recipe to fill up the pan… oh! Last thing… this was my first time baking a cheesecake with no water bath and not a crack in sight!! It was beautifully smooth! Thank you so much for such a delicious recipe gift! Another hit! ❣️💕

    Love the white stove. It goes with your white refrigerator. I don’t see why SS is always the go to. White is clean looking. By the way this is Philadelphia Cream Cheese’s 150 bday. 🎉

      SS and black are popular cause white is horrible for appliances. In 10 years, they get discoloration no matter how expensive it was or how much you clean it. Appliances should last longer than 10 years and practicality should trump looks every time.

    Made this for easter dinner, and it was delicious. It was my very first time making cheesecake and it couldn't have come out better. Everyone was greatly impressed!! 10/10 Recommend

    I appreciate that you bought your own range and bought one that's still super accessible and what most of us have in our homes. I would've been so tempted to buy a mid-range GE Cafe range or something similar and justify it by saying that it was "for my job"! I get that you're renting so you don't want to necessarily invest but still. Keepin' it real, Roman.

    15:29 A water bath is an insulator. It prevents the outer edges from overcooking by the time the center is cooked properly. With cheesecake, the crust itself can serve the same purpose if you cook it gently enough and cool it properly. Is it necessary? Not always. Is it pointless? No.
    By the way, I think this is the best cheesecake recipe on RUclips. 2nd to none.

    I think what makes Alison stand apart from the BA, NYT, FN, indie content out there is her natural ease and fun personality. You can tell that in her case, confidence and comfort in front of the camera are not acquired. She has opinions, she doesn't seem to be hung up on how they will be received, and honestly, I/we want to hear them in her no-BS voice. Of course, she's also a fantastic cook.

    Lol love that’s she says she had to give the measurements in ounces etc instead of numbers as cookies, because every cookie brand does it different.
    All I can imagine is the majority of the rest of the world giving MASSIVE side-eye in metric!🤷🏻‍♀️😂

    It has been a month, and this is still in my head. I don’t see how in the world a cheesecake can be baked in 20 minutes. Of course a water bath isn’t needed if the cheesecake isnt fully cooked. I have never baked a cheesecake for less than an hour in all of the hundreds of cheesecakes I have made. I feel much better finally having this off of my chest.

    Thank you, my answer to Easter desert this is just fabulous… I love how you appreciate really good products and produce and just really showcase the experience of their loveliness with whole hearted pleasure, this, I dare someone to watch this and not need to go buy cream cheese and I caved and bought my first spring pan…how I’ve made it through life thus far without one is not something I feel unashamed to examine Ahha.

    I just made your cheesecake from NYTIMES and it turned out perfectly! No water bath!!! Always hated that water bath because water would always get into my crust somehow and make it soggy! This recipe is much different than the NYTIMES, less eggs, less butter in crust, I think I’ll stick to that one but incorporate the zest!

    Orange is a fantastic addition to savory dishes. I used to do a killer beer+citrus (usually lemon, but orange works too) glaze where I braise chicken in beer, honey, and a full juiced citrus of your choice. Just...don't use grapefruit or close relatives. They become _so_ bitter when cooked.

    i have been making cheesecake for many years, and i am excited to try this as it only has 2 eggs! usually i use 3. philly cream cheese is definitely the only one to use. i also like using the chocolate graham crackers, but lately they have been hard to find.

      I don't know about chocolate graham crackers, but I add 1/4 cup of cocoa powder to the crumbs and it works out just great!

    Thank you Alison! This has been my go to cheesecake recipe since you wrote it for the Times, it is delicious and almost never cracks! (The one time I did, it was my fault for rushing and I covered it with citrus slices and guess what? EVERYTHING WAS OK! Maybe I use use a larger pan than prescribed, but usually mine takes over 40 min to bake, and this has been in multiple different ovens.

    Ooo ooo my moment to shine.
    Philadelphia cream cheese is made in New York, not Philly. It was named as such because in the 1880s, Philadelphia and the surrounding area were well known for their high quality, high cream dairy. Also its creation was an accident.
    There is actually a Philadelphia, NY, but it has nothing to do with the story.

    Respectfully, if your fridge is stainless steel, and your dishwasher is stainless steel, you should consider an oven which is also stainless steel. You don’t need this type of chaotic energy in your life.

    A point that should've been made in this video. No, you don't need a water bath for a recipe that only uses 2 blocks of cream cheese. But if the recipe calls for 3 or 4 blocks of cream cheese, I would definitely use a water bath.
