My paternal grandfather was born in 1889 and spent a good portion of his younger years in the 'wilds' of New Mexico. He told us about cooking a whole slab of bacon (pork belly) on the coals of a campfire by putting a wire through the end of the slab, then just placing the bacon on the live coals, turning it when one side appeared done. He said that when picking the bacon up by the wire, the grease running off would also take all the ash with it so they didn't have to worry about that. He loved the outdoors and told many stories about camping, fishing and hunting back then.
Nothing better or more fun than sitting around a fire, and that setup is so cool, then there is the scenery, wow. The tripod like grilling is also very cool. The ribs looked good. So much fun hanging out with friends. Nice video

Flip the top triangle that holds the poles over so the flaps face down and your chain will move up and down more freely. Great video, keep it up!

The last time we were in Boone we cooked some ribs over the campfire. They were so good. The flavor and char you can get is like no other. Great looking ribs bro. Beautiful view!

Yep believe it or not, it only took like an hour and 15 minutes for the ribs to hit tenderness. It actually took longer for the fire to be ready than for the ribs to cook lol!! We had a blast and can’t wait to do it again. ✌️

The first time I had a steak over wood coals, the cook used oak and you could taste it. I have used apple wood for ribs, what did you use? I haven't used a gas bbq in a long, long, time.

The one we used seemed pretty sturdy - we had really strong winds that day, and it held its ground. Not sure where Jamie got his. I’ll have to ask and let you know! ✌️
Why everone likes it? The one side looks ok, the other is totaly burned... is it tasty to eat coal in one side.. looks horrible and doesnt even used foil to avoid burns on ribs... or you people getting paid for positive comments?
You guys need a Santa Maria grill for this. The ability to raise and lower the grill over an open fire provides for greater control of the cooking process. Still, nice work though

I rarely use a sauce on ribs. The most I'll do is a light glaze, but that's it. On this particular cook, we just wanted to see how it tasted with just a bit of dry rub. Thanks for coming by!

Did you need to adjust the coal bed at all during the cooking? Did you need to refill woods?

You off set them for a slower cook and more tender and less burn. Low and slow
How would you add bbq sauce to these? Could you do it at the end for last 15 min? Or not recommended for open fire? Thanks!
Yes you have the right idea. I would raise the grill just a little depending on how the coal bed is. If it's too hot you would burn the sauce.
