- We've been trying to introduce our traditional dishes to our kids by making them many colorful delicious desserts. Some of them were Steamed Rice Cake, Steamed Banana Cake, Steamed Pork Buns, Fried Bananas,... This time, we are making another beautiful treat, Steamed Layer Cake (Bánh Da Lợn), Steamed Tapioca Layer Cake, or Pig Skin Cake. Even though this beautiful cake goes by many different names, it comes up with the basic of soft, sweet, and little chewy in texture; and can easily peel by hands into each layer without breaking apart.
Main ingredients includes tapioca flour, rice flour, coconut milk, mung beans, and pandan leaves. This Steamed Rice Cake has green color layers of pandan leaves alternating with the yellow color layers of mung bean paste.

For the Green Layers
2 cup tapioca flour
1/4 cup rice flour
1/2 cup sugar
1/4 tsp salt
1 1/2 can coconut milk
3 oz pandan leaf
1/3 cup water
2 drop green food coloring
For the Yellow Layers
3/4 cup mung beans (cooked with 1/4 tsp salt)
1/2 cup sugar
1/4 cup rice flour
1/2 cup tapioca starch
1/2 can coconut milk
1/2 tsp vanilla extract
2 drop yellow food coloring
