A Malaysian friend made this when I was in Perth 34 years ago! She used food colouring which made the layers more obvious. Do you have any suggestions for food colouring?

Do I need the 1 teaspoon kansui? Will it effect the taste? some video said add dark brown sugar (not the block ones to add color to it and without the kansui) any recs or what should i do?
