To those that say the squid is conscious, a squid's brain is located wrapped around it throat basically. when the chef tore off the beak, he tore the brain out with it, or at least caused enough physical damage to render it inoperable as an organ, pretty instantaneous. The squid's basically brain-dead as soon as he removes the beak. That being said, the cells in the squid's body are very much still alive hence the movement and twitching, it's just going on pure reflex now instead of any purposefully directed movement. The big shiny organ that was removed and cut up was the egg sack, everything in the body of the squid is basically reproductive organs, heart, and digestive track.

If you feel bad for the squid, this might help you feel better. It was a quick kill, it still moves only because its fresh, the biochemistry still functions. There are sources of unused energy (ATP) stored in the muscles . The salt in soy sauce activate an action potential, therefore they can still contract until the ATP is used up :)

Ok - some people here can’t seem to tell what is taken out and such 1. After cutting the shell the chef removes the gut, gonad, heart, and liver 2. The silvery shiny part that is saved and later chopped is the liver 3. So the head with the legs still has an active brain that’s probably in a whole lot of shock The brain is located between the eyes of the squid, instant brain death is only achieved by cutting between the eyes or blunt force trauma. I unaware of the brain ever being removed when the guts are. I back this up due to the colorization of the cells still active around the cut up squid - meaning there’s still cellular activity Hell I would be too if my beak was ripped out then unceremoniously cut open, my guts torn out, and I watch as my outer shell is skinned and cut up Granted, I would be willing to try this dish So for all those saying the squid is dead.....no it’s dying. After the chef cut off the two front tentacles, which are not directly connected to the brain and thus the squid felt no pain, or wouldn't for a couple of hours until after it was cut off, he tore out the beak which includes the brain. It's kinda like when a lizard loses its tail and the tail still wriggles around for a little while. That's what's happening with the squid. Although it did make me shutter a bit at the thought of it having feeling. It is for sure dead.
To all the people complaining about the squid "suffering as it's being eaten alive"...it's not. It's already dead by the time they serve it to you. It's just common science behind the "dancing" nature of the dish. The squid is dead, but still served very fresh, and therefore still has a lot of moisture in its body. Soy sauce is very salty and has a high sodium concentration. Sodium tends to draw out moisture so when you pour the very salty sauce on the moisture filled body, it starts to twitch and "dance" as the soy sauce is drawing the moisture out. Also, the color pigments in the skin can still change and pulse some time after they are dead due to just how complex their body systems are. The same thing can sometimes happen in Cajun cuisine and frog legs. Sometimes when they are preparing frog legs, the removed legs will twitch and kick when salt or something salty is put on them.
I think this is incorrect… it literally comes from sea and ocean which is also very salty…. But I saw a different video where the chef offed the squid with a concussion before skinning it, and I can say for a fact the way the squid reacts in this video is almost nightmare fuel. For me personally, I don't think I could feel OK eating a still-living squid that dances. And you can tell it's still alive cause it still keeps it's color. 1. After cutting the shell the chef removes the gut, gonad, heart, and liver
2. The silvery shiny part that is saved and later chopped is the liver
3. So the head with the legs still has an active brain that’s probably in a whole lot of shock
The brain is located between the eyes of the squid, instant brain death is only achieved by cutting between the eyes or blunt force trauma. I unaware of the brain ever being removed when the guts are.
I back this up due to the colorization of the cells still active around the cut up squid - meaning there’s still cellular activity

The squid was long dead before it hit the plate. After the chef cut off the two front tentacles, which are not directly connected to the brain and thus the squid felt no pain, or wouldn't for a couple of hours until after it was cut off, he tore out the beak which includes the brain. It was dead before it knew what happened.

To all the people complaining about the squid "suffering as it's being eaten alive"...it's not. It's already dead by the time they serve it to you. It's just common science behind the "dancing" nature of the dish. The squid is dead, but still served very fresh, and therefore still has a lot of moisture in its body. Soy sauce is very salty and has a high sodium concentration. Sodium tends to draw out moisture so when you pour the very salty sauce on the moisture filled body, it starts to twitch and "dance" as the soy sauce is drawing the moisture out. Also, the color pigments in the skin can still change and pulse some time after they are dead due to just how complex their body systems are.
The same thing can sometimes happen in Cajun cuisine and frog legs. Sometimes when they are preparing frog legs, the removed legs will twitch and kick when salt or something salty is put on them.

I'm not an animal activist. So don't think this a hate. But I saw a different video where the chef offed the squid with a concussion before skinning it, and I can say for a fact the way the squid reacts in this video is almost nightmare fuel.
For me personally, I don't think I could feel OK eating a still-living squid that dances. And you can tell it's still alive cause it still keeps it's color. When it's unalive, it goes nearly transparent and white.
