    You mention several times about the temperature and not "burning" the milk, but never discuss actual temperatures or a range of temperatures. So I have no idea whether I'm burning my milk or what temperature range I should be working with? Would you please elaborate with some specifics ranges and what is too hot (ie: burning)? I too use only the Califia brands, so this is perfect for me! Thank you very much.

      I find 140° is a safe temperature to go. That's the general temp for the average hot drink, at least as far as I know

      In Celsius it's 60-65 to be perfect, no more than 70!! Although I personally drink at around 55

    I have been trying nut milk for a long time, but they never suited. I'm from New Zealand and have drank grass fed dairy milk all my life, HOWEVER, I gave cashew milk a go. Perfection! No nutty taste competing with the coffee.

    Great video! Out of curiosity, is there a reason you hold the pitcher on an angle instead of resting it flat against the tray? Can’t you replicate the whirlpool with an angled steam wand while resting the pitcher flat on the tray?

    • @Sprometheus
      @Sprometheus  4 года назад +2

      Thank you! On some machines you can do this, but since the Linea has so little clearance it’s tough to fit it in on the tray and have the wand in the milk in a way where it will work well.

    I’ve tried a bunch and my favorite taste wise is full fat Oatley. It seems to steam and taste just as good as the Oatley Barista Blend and costs about half as much per ounce in the 1/2 gallon size.

    • @Adeline9418
      @Adeline9418 3 года назад +2

      @@Adeline9418 Some milks have added fat, if the above comment refers to Oatly, they add rapeseed oil as far as I'm aware.

    I’ve found Califia > Oatly for barista blends but Silk Oat Yea! is also wonderful and very affordable with a great taste.
    Like you I let oat milk sit for 20-30 seconds, along with some tapping really helps get the bubbles out and a nice gloss.
    I’ve found stopping at 135-140f to be the magic point, the milk will creep another 5-15 degrees higher as it sits too.

    • @missahmoo

      Default 165. “Hand- hot”. When the bottom is barely too hot to touch. 145 is more European temp and less practical in a coffee shop setting, but may be more practical at home. Milk that’s too hot generally loses it’s integrity and becomes ass to pour. 180 is your max for all milks.

    • @vsanchez1993

      Brent Goodale im no pro but what helped me was tons of practice/time and making sure your milk consistency and pour speed was on point.

    • @jordanandre7941
      @jordanandre7941 4 года назад +1

      Try tilting your cup aggressively (around 45°) and pouring into the centre of the espresso. When the coffee fills to the lip of the cup, lower your pitcher down so that the jug is touching the lip of the cup. When this happens, slowly tilt your cup until it is upright again. Keeping your pour steady and consistent while you fill the cup is important.

    • @BrentGoodale

      Jordan Andre will try thanks!

    • @Sprometheus
      @Sprometheus  4 года назад +2

      All great tips for sure! Focus on pace (the faster you pour the more contrast you’ll get and the slower the more liquid you’ll get), proximity (get as close to the surface as possible when you want to pour your art), and position (always start your pour in the center of the cup).

      @@Sprometheus so going slower should help the milk kind of push and spread out easier? I'm having issues with the milk just kind of pooling up and making a blob exactly where I'm pouring. Also using the kalifia oat.
