Yes you can buy something called browning to darken the rice. Still use soy sauce for taste becareful with the browning you only need about a cap full the bottle dose not have a pour proof sprout soon watch it but it will give you that color.

Darn right you do. I used to go to a little hole in the wall place on Delmar when I was in college and I'd order them all the time. I want to go back down and stuff my face full of them until I burst, or have a heart attack, whichever comes first.

I worked downtown St. Louis for over 30 years. Right across the street from the old Globe Democrat building on Tucker was a Chinese restaurant next to the Mo Bar and Grill, They had the BEST St. Paul sandwich I ever tasted. We would eat there two or three times a week. Always your money's worth and the taste was SENSATIONAL!!

I'm from St Louis and I absolutely love the St Paul sandwich... I usually get the special the St Paul which contains beef and chicken in addition to the shrimp... I also get a slice of cheese added. Us St Louisians love Chinese food!

I really enjoy your videos, and thanks for covering the St Paul. When I was much younger (and very broke) I lived in St Louis, and the St Paul sandwich was my favorite thing to order in any Chinese place, since it was both filling and usually the cheapest thing on the menu. I could usually get two of them for the price of an order of fried rice. Sad to know when I move to Iowa I'll have to make my own, but I have your video to help!

Chinese restaurants I ate at DID use sliced tomatoes on their St Paul sandwiches...
I've only ever had one Chinese restaurant put tomato on a St. Paul. Their food was crap and they went out of business in 3 years. Go out to Florissant and try a place called Old St. Louis (pronounced Luey ) Chop Suey. You'll get the best St.Paul EVER.
The places I ate when I was a kid gave you the bread and the lettuce and tomato to make the sandwich when you ordered egg foo young.

People in the STL are serious about their St. Paul Sandwiches. Just like your channel, If you are feeding your family and money is tight, this sandwich will fill you up and not cost a bunch. North Side Stl has some of the best places for this sandwich. Make mine with beef or chicken. Throw some hot sauce on it as well. Good video!

I've lived in MO all my life. I used to get these in a place just south of STL in Festus, MO and they were awesome. You could get whatever you wanted, beef, pork, etc. I'm now in SW MO and you really don't see them around here.

Bo Fung on the south side makes a great one as well. I lived around the corner when they opened in the mid 80s

When I was a kid, here in Philly (PA) we had the same sandwich at our local Chinese take outs. It was called a "Western Sandwich". They were great! lol. Yours looked great too!
Yep the Western sandwich is also known as a Denver sandwich and James Beard thought it was created by the Chinese cooks in the 19th & 20th centuries on the railroads! Thanks Quinn!

Hard to find a place that serves a Denver sandwich any more. They used to be as common on menus as BLTs. I suppose that will be the next one to go. They don't toast the bread any more, they grill it. Not the same thing and not what should be used on a BLT or club sandwich. (Sigh).

Well Larry brother. I made this sandwich today. I have to admit it was rather good! The ingredients worked well with each other and blended nicely. The look to the eye was okay, However the smells as it all came together was excellent. Little hard to control as some ingredients slipped out but then it happens lol.
Overall Larry, I will give a 8.0 score even though I am not much for egg sandwiches. I think you nailed it on this one.
Maybe a good sourdough bread might be good as it would add another flavor. I just might have try that next time.

awesome! as i am allergic to shell fish as is my wife we would need to use something like a plain pulled pork with maybe some Asian inspired seasonings, or chicken...would be good that way too!

My first time hearing of this. Interesting. Sounds like it's an egg sandwich but the benefits of egg foo young.
I'm Chinese-American but I've never seen this on any Chinese restaurant menu. I do, however, remember that I used to order an actual Denver Omelette at the diner and put it between toast with bacon to make a sandwich.
It's unique to St. Louis. (However, from the video and the comments it seems to be found in some towns in southern Missouri and maybe even St. Paul. I know that in my travels around the US in the numerous Chinese restaurants that I visited, no one had a clue about what I was talking about.
I was so surprised when I moved away from St Louis that this was not a common thing in Chinese Restaurants. I had one today for lunch.

Thank you Dave! Not sure really about the cornstarch, I have never used it in my EFY. Recently I have been seeing EFY recipes with cornstarch in them so I gave it a try. Didn't notice any difference, good or bad.
I always wanted to try this sandwich, but when I start makin the egg foo yung, I stop there and eat it the usual way, lol.
My daughter did exactly that, her's never made it to the sandwich! LOL
I seem to remember you could order them in like 3 variations. I'm assuming the meat is different. I've always thought it was a weird sandwich. good job.

They aren't all over Missouri there might be a few places outside of St Louis but not many. They are not in all Chinese restaurants in St Louis mostly Chop Suey places the more like a dive the better the sandwich

This isn’t Chinese food by the way. It’s just American food. I’m Chinese and I’m from St. Louis. Never heard of it until a few months ago. I’m almost 30. I would think the reason why this thing exists is because Americans would think real Chinese food is weird or disgusting.

Question: what does the cornstarch in the egg mixture do?
As to the raw shrimp, I will never understand why so many people are so terrified of raw meat. It seems like many of them think raw meat is poisonous in and of itself. Of course you wouldn't want to put raw chicken in this, the eggs would be burnt by the time the chicken was cooked. But the heat needed to cook the eggs is quite sufficient to cook the shrimp.

Yeah the only meat I would pre-cook would be chicken. Beef, pork and seafoods will cook sufficiently mixed in raw with the eggs in my opinion.
