Sadly, our old house and my father's business building and garage, which he constructed are now gone. The building you showed for the Maid Rite building was the one in Macomb, IL. My Mom, born in 1921, worked in that very building when she was in her early twenties! Unfortunately, the building was torn down several years ago, they were trying to get it classified as a historic building, but, it was beyond repair. My Mom passed away on January 12, 2018 at the age of 96 years, 4 months, to the day! 💔
Well this is another one for the books! I made this one this evening and it was phenomenal! I cooked it the maid rite way in my Dutch oven for two hours as suggested. All i can say is it was a huge hit and so cheap and easy to make! This is the second recipe of yours I made in seven days and it, like the other one, is definitely going in the regular rotation. We live in Jacksonville Fl, my wife worked for a local sandwich shop called Lubi's for many years, they make ground beef sandwiches, browned ground meat is steamed in a long roll with finely diced onions, that's the original then you can add cheese for a cheese lubi, add chili for a chili lubi, beef stroganoff, one called the mean machine has chili and a salad on top. They are really pretty dang good and very filling!
My dogs love it when I made these!! The cheese kind of helped out, by forming a surface over the "loose meat' ones that i also made. They were gooood! My husband really liked the ones without the cheese the best and asked that I make more soon(IKR!) I had never heard of these before, glad I know about them now, TFS!

Just made some of these last night (the made rite way, some people wanted it with cheese and stuff and others didn't) they were absolutely incredible and a great pleaser.
I make a version of these. One secret I've found is to assemble the sandwich, wrap tightly in foil, then place in a 300F oven for 10 minutes or so. It softens the bun and at the same time makes the meat stay put so it doesn't fall all over the place when you eat it.

The cafe at the museum where I used to work served something similar. The guy who ran the cafe/lunch stand called it a Hefty Helga. I think he used ciabatta buns for the bread, iirc.
If you have some dried onion then mix that into your ground beef and then let it sit in the fridge for a while before starting. The other option is to mix in packet onion soup.
Dirty Robot have been making these with Lipton onion soup mix now for years with a little water. While Roseanne was still on tv and she had moved to Iowa. Ladies Home Journal did an interview with her and in that interview gave a ' copy cat' version of loose meat recipe.
As someone who grew up on Maid Rites, I will provide a simpler and quicker way to make these: 1 1/2 lbs. hamburger, 1 can chicken broth. Cook the beef in the broth, breaking it up as you cook. Cook until almost all liquid is gone. Drain off the remaining fat. Pile on a bun with chopped onion, yellow mustard and pickles. Tastes just like I remember them!
Considering Maid Rite was created in 1926, I believe the original recipe would've been very simple. Wichita KS has a similar type called NuWay, created in 1930. Also a loose meat sammy.

I use beef broth ad a beef bouillon in mine. The joy of these sandwiches is you can add anything you like. minced onion or garlic. Just watch the salt on these, you can go overboard and make them inedible. lol We love them with American chees.
I only had Maid-Rite once in life, on a very long road trip. Had never heard of it. In my vague memory it was not very seasoned, maybe salt and pepper. A very plain thing, big hearty serving. The cooked meat was in a big appliance, it seemed like they had cooked half a cow. It was served on to the buns with a big ice-cream scoop. It worked for me! It was a big meal, the local customers were all HUGE men. Everyone seemed to be having the same meal, two of these burger-substitutes, fries and a milkshake. At the time I thought it was funny that (it seemed) people thought hamburgers were too fancy, or too much trouble or something. In action it was simple and efficient and economical. Thirty years later I thought of doing this for myself as a bachelor chow kind of thing, and am pleased to find that there are videos about it! My memory of this is that it was basically just plain cooked meat, I'm glad to find otherwise!

They had a stainless steel sink filled with ice cold water and the glass mugs were nestled in the water adjacent to the big barrel type dispenser of Root Beer. The original location is now gone, but we've never been without a Maid Rite as long as I can remember. And the buns were steamed not toasted. I never knew how the got them so soft! Yes, when I lived in N.C. anytime you got a hamburger or hot dog they ALWAYS steamed them right before loading the buns up. Like you said it makes a huge difference!! Thanks for watching, please let me know how you like my version!
I`ve tried your version Larry and found it to be almost spot on. Only thing that seems out of place is the use of brown sugar. This makes the burger taste a little sweet and I`m not sure the original burger tasted quite that way. Very good recipe though. I will make it again.BTW, I could only simmer to one hour on my try. Ran out of liquids at that point.

Love making these but I NEVER use Soy Sauce or sugar :) I also make a White Castle loose meat version. Ground beef with a bit of beef stock mixed in before tossing it into the frying pan. Dehydrated onions A LOT of them... (rehydrated first) in with the water with again, some beef stock and eliminate the Vinegar, Worcestershire, sugar. Add a good dose of sale and pepper and some mustard if you want to. I just add that and pickle to the bun afterwards. Before all the water has steamed out of the pan, cover the layer of beef with your buns and cover for a couple of minutes. Comes out pretty good for a loose meant version of White Castle.
When I moved from Iowa I'd get a craving for Maid-Rites and made them from a recipe I got from Dubuque in the 70's. Alot like yours. Never seemed quite right until I tried some rootbeer concentrate. Still not just. After some trials I tried adding some Curry powder. Bingo. So for me, it's not a MaidRite without RootBeer Concentrate and Curry powder.

Maid Rite seasoning packets have chix base and tvp among other things. BTW Taylor Maid Rites in Marshaltown, Iowa didn't even offer ketchup for 80 years until they added fries to the menu a little while ago.

I live about 40 minutes from a Maid Rite... I don't care for the sweetness of the sandwich; but it is nice to go to a place where my Mom went as a teen and share in her history.
My Mom worked in a small restaurant in the 1950's called Docinsins'. They added 7-up to the meat. She said they sold like crazy. They sold them wrapped in a piece waxed paper folded in triangle shape, like a diaper. She made them for us our hole childhood and then some.
Several years ago, I was on the Made Rite website and saw they were opening a restaurant in Wilson, NC. That's about 15 miles from my house. Once they opened, I took my daughter there one afternoon. They were packed with customers and the place was buzzing. We tried their loose meat sandwiches and enjoyed them very much. We returned about 8 months later and were the only customers. In fact, all the employees had been let go and only the owner was keeping the place open. It wasn't long after that they closed. I guess this part of the country wasn't ready for loose meat sandwiches.
It is...also everything done on a flat grill so there's no real 2 hour simmering or anything. But a good way to do the bun is just lay it tilted on top of the cooked meat in the pan and cover for a minute or even less before serving. Good to see the Maid-rite inspired vids!
I always think of Roseanne when I think of 'loose meat sandwiches' haha .... remember? Roseanne and Jackie were serving up the loose meat at the Lunchbox!
I moved to Quincy, IL in 1978. Soon after we got there we kept hearing about Maid Rites. There was actually a restaurant called Maid Rite. So we tried them. Quincy locals thought they were great. I tried them a couple of times and gave up. I thought they were just very bland loose meat hamburgers. Tried one a few years later at another Maid Rite but they were no better. I was part of a very small minority who didn't like the maid rites but that is my take. I do like sloppy joes which is actually a kind of maid rite (loose meat) with onion, bell pepper and some spices and tomato paste or ketchup.
We have nu way here not sure about the seasoning but it comes with mustard, pickles, and onion. I personally dont like it without Tabasco sauce. Their root beer is awesome tho

My Mom worked in a small restaurant in the 1950's called Docinsins'. They added 7-up to the meat. She said they sold like crazy. They sold them wrapped in a piece waxed paper folded in triangle shape, like a diaper. She made them for us our hole childhood and then some.
Minus the onions, that recipe sounds awesome

Several years ago, I was on the Made Rite website and saw they were opening a restaurant in Wilson, NC. That's about 15 miles from my house. Once they opened, I took my daughter there one afternoon. They were packed with customers and the place was buzzing. We tried their loose meat sandwiches and enjoyed them very much. We returned about 8 months later and were the only customers. In fact, all the employees had been let go and only the owner was keeping the place open. It wasn't long after that they closed. I guess this part of the country wasn't ready for loose meat sandwiches.
Simple groundbeef and onions. I gotta try it someday

just like Roseanne used to make! I remember eating maid rite when I was a kid and I think it was steamed bun.
You don't see steamed buns much anymore, ALWAYS had them like that when I lived in N.C.!
It is...also everything done on a flat grill so there's no real 2 hour simmering or anything. But a good way to do the bun is just lay it tilted on top of the cooked meat in the pan and cover for a minute or even less before serving. Good to see the Maid-rite inspired vids!

I moved to Quincy, IL in 1978. Soon after we got there we kept hearing about Maid Rites. There was actually a restaurant called Maid Rite. So we tried them. Quincy locals thought they were great. I tried them a couple of times and gave up. I thought they were just very bland loose meat hamburgers. Tried one a few years later at another Maid Rite but they were no better. I was part of a very small minority who didn't like the maid rites but that is my take. I do like sloppy joes which is actually a kind of maid rite (loose meat) with onion, bell pepper and some spices and tomato paste or ketchup.
2 1/2 hours to cook this meat, but don't have "time" to toast or steam a bun. My favorite chef

We have nu way here not sure about the seasoning but it comes with mustard, pickles, and onion. I personally dont like it without Tabasco sauce. Their root beer is awesome tho
