    I completely agree that a little brown on scrambled eggs doesn't belong, and that made me worried about trying a frittata sometime. You've convinced me to give it a go!

    I am glad YT’s algorithm sent me your cooking site. I am like Henry Hill, a NY Italian transplanted to Omaha, Nebraska. He came to Omaha because of Witness Protection; I ended up here to go to Creighton Medical school and stayed because of my Blondie. I hate flipping frittatas,and I don’t want to turn on the oven. Your method I have thought of but never did it myself. I will try it, but I wonder if the bottom was too done? I like how your omelet puffed up . Glad you pointed out to let the omelet rest in order to release. A lot of fond memories of Mom wrapping a potato frittata hero for a school lunch.

      I like how they puff on the stove top, and the underside will be browned, which I sort of like as a crust. Hope you enjoy it!

    Wow. You showed the underside of your frittata and it’s beautiful. I’m not much of a cook, my motto is “ I ’m not a cook I just prepare food“. I also don’t through dinner parties unless they’re at a restaurant. I made something this morning with just egg and cheese. I don’t have an oven, just a cooktop. I feel inspired I can do this!

    After paprika what did you add.

      I added a few white beans. Then the egg mixture with salt pepper, and a touch of Parmesan cheese.

    This is not a fritata my father is Italian fritatas have pasta in them this is like a quech or something deff not a fritata

      I love the idea of a pasta frittata. Thank you for sharing your father’s definition! I’ve only had frittatas with potato, but will try pasta next time. 👍

      @@DougCooking never tried with potato the pasta is used to make everything stick better he also used paremsean tomatoes cilantro etc but Ya i grew up eating fritata and always had some pasta in it. You should deff give it a try
