Breakfast IMHO is probably the most stereotypical of meals, so it's always refreshing to see something out of the ordinary. The first time I went to Amsterdam as a college student, I was blown away at their unusual breakfasts . . . basically, an alphabet of luncheon meats/cheeses, hard-boiled eggs, and a ton of different breads/toasts. Then I caught on to Japanese breakfasts . . . rice with fish, rich broth, an egg beaten in, greens. Breakfast does not have to be dessert laden with sweets and sugar. Thanks for posting. I also love breakfast muffins that can be frozen---quickly microwaved and eaten on the go .... Hope you are recovering from loss of Whiskey. I was so saddened to hear the news that this is the first time I have commented since . . .
You're so right, ideally, breakfast meals should never be sweet. Recovering one day at a time, but it is still painful.

I’m American, Italian decent, we love making and eating Frittata. So easy to make. My Mother made them often especially over the Season of Lent. Potatoes, onions and eggs were a favorite. Peppers and eggs, another. Asparagus and garlic, with Romano cheese in the egg mixture another. Sometimes when there was a few Italian cold cuts left she would sauté them with an onion and add eggs. What ever your leftovers you can turn it into a beautiful meal. Add salad, garlic bread, can’t be beat. Best wishes ♥️♥️🙏🙏🇺🇸🇺🇸

Your recipes are always so so yummy! This should freeze okay for at least a week, don’t you think? I’d be making this for two people and would love to have this for another time so just defrosting it would be so convenient! That with a small salad for dinner!
Yes no problem. I do recommend to reheat in oven once thawed out, not in microwave.

What a beautiful meal to have, funny back 50-60 years ago mom made something similar and we called it baked eggs and stuff. I love the addition of ricotta cheese, it goes well with anything, and feta as well. Thanks again chef! God bless you.

I always serve this with a tomato and red onion salad, with a balsamic and olive oil dressing. Cuts right through the carbs. Delicious. Also, I just use cream instead of ricotta.

Try steaming the potatoes…their flavor is deeper plus you save water 😊. Steamed potatoes make great mashed potatoes too, or just about any other potato dish.

the one rule about frittata club, is you dont talk about frittata club.....[winks] no seriously the only rule i was taught, is that you can put almost anything into a frittata, just have to make sure its cooked first :P....frittata's are so good and easy :)
