  • (1) Italian flat bread, also known as Piadina, made from scratch!
    A piadina is a type of Italian flat bread that can be filled with many different exciting fillings. You can make it from scratch, or alternatively, buy readymade flat bread. Either way I guarantee a delicious meal that even the kids will enjoy. Piadina is also a fun Italian street food in which you’ll find many combinations of fillings. The flat bread dough comes together by simply mixing flour, water, olive oil, baking powder and salt. You can make it by hand as I did, or use a mixer to knead the dough. I suggest making extra dough, as you can freeze it ready to cook anytime for fresh bread. For the filling, I have kept it simple. Cheese, rocket lettuce and prosciutto.
    (2) Sourdough Bread Starter. How to Make it in Seven Days. Making your own sourdough bread is one of the most satisfying activity you can do. In fact, I must warn you that it can get addictive. So why should you make your own sourdough bread? Sourdough bread is a much healthier alternative to regular white bread or even whole-wheat. It’s more digestible and nutritious. It will help keep your gut bacteria happier. It is also less likely to spike your blood sugar. But forget the health reasons, it is simply a more delicious bread. Once you taste the difference, there is simply no going back.
    (3) Sourdough Bread - How to Make Artisanal Sourdough Bread at Home. This will be your goto sourdough bread recipe. It’s easy and yields amazing results. Welcome to the world of home bread making.There is a lot to understand about making sour dough bread. Sometimes too much information will do your head in, therefore I’ll try to keep this as simple as possible, even remove steps that aren’t absolutely necessary. There are many different techniques and variables for making sourdough bread. Some are simple, some complicated and others simply over complicated. They all yield different results and in time, you can try different techniques and adapt your own style. It’s actually more about technique than the flour.
    For this recipe, I will show you what I believe to be the simplest method that will still provide amazing results. It’s not the best method in the world, but a simplified version that I know you will love. And no, there’s no kneading required, only mixing and folding.
    (4) Focaccia with rosemary and sea salt. Incredible yet simple Italian Bread. It always amazes me how some simple foods can taste so incredible. Focaccia is one of those foods, it has few ingredients, yet it’s almost magical how great it tastes! Focaccia is an oven baked italian bread similar in texture to pizza dough. Popular throughout Italy (and I can see why!) This is the perfect focaccia recipe because it’s crunchy on top and on the bottom, plus it’s light with creamy pockets of olive oil goodness. It’s not too thick and not too thin. Salted with flaky sea salt and some fresh rosemary is sure to put your taste buds into orbit. Eat it fresh out of the oven, and shut your windows as the cooking smells will attract all the neighbours!
    (5) Soft Buttery Naan bread. Never buy it again! A softer a fluffier naan bread recipe you will love. Naan bread is a flatbread commonly know to be from the Indian subcontinents. Most people buy it ready made from supermarkets and once you cook your own, there is no going back. This recipe has butter, milk, and yogurt. It also has egg, yeast and baking powder making it softer, richer and fluffier. You can use ghee which is a healthier clarified butter, but any butter will be fine.
    For the flour, I used bread flour but I’ve had great success with all purpose flour even whole wheat flours. You can even combine them, that is up to you. The white bread and all-purpose flour will yield the fluffiest results.
    (6) Easy to make Roti Bread “Chapati” - Flat bread made with few ingredients. Unlike traditional breads, Chapati or roti bread is simple to make as there’s no yeast, so no proving. It only requires five minutes of kneading, ten minutes of resting and cooks in minutes. It’s origins are from India and is also common in South East Asia. Your kitchen will smell of toasty hot bread, and if you’re like me you won’t resist eating at least one piece with a little melted butter. I used all purpose or plain flour, but traditionally whole wheat flour is used which makes it a little coarser.

    I only bake bread and love to do it. I haven't bought bread in several years knowing the added preservatives are scary anymore. As a child, store bought bread could mold within the week. These days the bread just doesnt grow mold. 6 weeks later still fresh. It just can't be good for us. I do 99% home cooking because of same reasons.
    I've appreciated each and every one of your wonderful recipes that always turn out wonderfully tasty. Your presentations are a great example to so many other cooking channels.

    Beautiful tutorial on breads and making them. I love rye bread but never knew that rye flower was used in sourdough. I've never liked sourdough bread but then it was just store bought and never had that beautiful crust or those lovely bubble holes in it. Now I need to buy a scale to make this along with some other precise recipes that use a scale.

I have been making my breads for several years mainly tortillas both flour and corn, occasionally focaccia, mainly boule, and sandwich bread.       Thanks Marjorie! I think it's those baking smells that keep me baking my own bread. Been doing it for years now, I never buy it. Plus I'm lucky that I have an ancient organic grain farm with stone ground mill for my flour, only 10 minute drive. Can't get better bread anywhere.

      Once you make it, it's hard to stop. Most commercial sourdoughs these days are fake, always check the ingredients, flour, water and salt, nothing else.

    Wonderful! And how timely as I’m baking my first sourdough bread tomorrow! My starter is ready and I can’t wait! I have baked bread,rolls and sweet breads for a very long time but never sourdough. But I will have to try your method! Looks so good, love bread with a good chew with butter! Yum!🥰

    Finally, Joel !! You create sourdough bread!! You are occupied by bread recipes, THANK YOU!! ❤ What a feast for the eyes, to ADMIRE!❤ From the création of the starter itself, to à great sourdough!! I personally have stopped buying bread during the last 3 years . I create my own sourdough black multigrain, 50/50 black and white flour. My starter is 3 years old by now.❤

    I grow up in a communist country, we don't have butter, our butter was lard from pigs,geese or ducks.We spread the lard on bread, salt and slices of onions, that was our sandwiches for school. Great recipes, like always.

    Naan could have been better if you would have just exposed to the flame directly on one side, flipping over a pan was not so good. there is a technique of sticking it on pan with water then flipping the whole pan to replicate the feel of a Tandoor. BTW loved your cooking style❤❤

    I'm exited to try ypur recipes. Question about warm water for the starter... is it just warm water from tap or boiled and cooled water? In other words, is warm water previously bolied or not?

      Depends where you live, best to buy filtered or spring water only for the starter. Otherwise, boiling it first is always a good idea then use it warm.

    In fact, here we call bread [Aisch] which means [life] because we were raised to believe that we cannot live without it. Bread is our most important food... without it, any food loses much of its value.🫓
    🩵My grandma used to say that the smell of bread is the smell of home, the smell of family warmth, it's like a strong hug.........and when you make bread, Chef Joel, I think I smell that smell and I feel that feeling, so I love all of these bread recipes, The Naan, The Focaccia, The Piadina, but number one is The Roti because it's closest to our local bread here. It's so easy, so delicious, and it's perfect for our food.
    🍞And The second is Sourdough Bread, before your recipe, I always felt that making it resembled a mathematical calculation or a physical theory, but after I learned your simple method for making Sourdough Bread Starter and making Sourdough Bread, I made it over and over again, and there is no going back.
    💛 I feel happy every time I see Whiskey 💛

      I do!! 💓 Even though it is difficult to handle, I like home made bread, but now I don't use starter, i use yeast. there was shortage of yeast in my coyntry during the lockdown and i had to make my own starter. 😊

      You can using a cast iron pan on high heat and press down on the edges with a spatula. Takes a bit more skill though.

    I clicked on the video because your chapati was so puffed up! I used to make chapatis with my mother as a little girl. Mine used to be nice and round but they would never fluff up. I haven't made rotis in ages. Maybe I will try again and see if it becomes puffy!

      Give it a go, make sure it rests well and it should puff up no problem.

      I use very little plastic, not a fan, sometimes however it happens. Most of the cling film I use is potato based, not plastic but looks and works the same.
