My mother had a dedicated broom handle that she had cut and seasoned and used it to open large dough sheets for pasta. You can cut it at any length you feel comfortable with. We used to make our pasta for the year every summer and all the beds were covered with huge round sheets of pasta waiting to be cut and shaped. Great memories but back then as a kid I was dreading summers for that reason. 😂😂
I don’t think I’ve ever commented on your videos before. But I had to let you know that your videos have been a wonderful source of inspiration and motivation for both my husband and I. We’re walking a similar path. We have a small farm in Texas which we acquired three years ago and it needs a lot of work. Between cows, chickens, sheep, and geese there’s also home schooling three children, a full-time job, and zero topsoil for the gardens. 😅 The Lord has been so faithful to teach and to provide and He uses you in some of that because on days when I struggle with my motivation I will usually turn on one of your videos and it helps ground me a bit and get back to what I love doing. Such perfect timing. I live in what is essentially a food desert nowadays. Pasta is a hot commodity! And I LOVE pasta. Can’t do wine currently, cause of nursing, but I will be enjoying a glass of pomegranate juice while I make pasta sometime this week. Probably tomorrow. THANK YOU.
I made lasagna noodles for the first time after watching this video. My mom taught me to make egg noodles for chicken noodle soup when I was a teen. My first attempt after I had gotten married I failed miserably. It has been many years. I tried again after watching this. I found that a good moisture consistency for me was for it to be moist enough that when folded in half it would combine well. I really enjoyed making the noodles. My 7 year old did too. Thank you.

I haven't used jovial's GF flour but I just made gnocchi using a baking 1 to 1 with ducks eggs and they turned out beautifully! So delicious! Wow! Thanks for the help and history on the different types of flour for what kind of pasta! Wow! Thank you! God bless you and your family!

Perfect video for me! I bought a pasta roller, but I am also new to using Einkorn flour. This will build my confidence in getting the dough *just right* and making hand-cut pasta before I tackle (and probably gumming up) my roller 😆 Thank you Elliotts!
I agree with you on ingredient quality. The biggest game changer for my breads and pasta was to quit using box store flour. Find a bakery supplier online I use honeyville.
Your video showed me that I’ve been making pasta the wrong way for a long time. Lol! I’ve been making it too dry which makes it hard to roll out and hard to cut! Thank you so much! I’ll definitely try and make this again.

I have always understood marble to be better for pastry but for noodles - where you want the dough at room temperature it’s better on wood otherwise the egg gets too cold.
If you added a small spot of sourdough starter to it and let it set for like 8 hours would it ferment the grains for the health benefits? Or would that mess it up?
You are making the pasta in the morning... for dinner. Is it better to make pasta and cook right away? Or is it better to make ahead (in the morning) and let it rest/relax (the gluten) and dry out? How to store before cooking on same day... ie fridge, in a plastics bag, on counter with a damp cloth covering? Would you form the dough early on or just before cooking?

I have never liked to cook...probably because I have a super picky family of eaters... but I always tie my hair back and wear short sleeves when I work in the kitchen and try and make everything easier if I have to cook! Thankyou for the lesson.... Q:: if one gets their eggs from the grocery store, which would be the 'best' eggs to buy, for making pasta?

Organic eggs. The best would be to buy farm fresh.
