Note to the Editor: I'm glad that you've drastically reduced the volume of the background music, but you don't really need it at all! It shows that you don't have faith in Ms. Strand's ability to keep the video interesting. She is a great host and doesn't need annoying bouncy background music to add energy to the demonstration.
all of everyday food shows have background music in some form or other, plus the name of THIS show is SWEET TALK so the music only adds to it sweetness
Skipping the shredded coconut altogether should be fine! But I'm not sure if you'd have to make a bit more lemon curd to fill out the middles properly.
You can totally skip the coconut! Just make a regular vanilla cake or lemon-flavored cake and you'll have a purely citrus dessert. I never liked coconut growing up so my grandma would always leave a little bit without coconut for me. :)

There's an unwritten rule that if you make a cake recipe video you have to cut it to show the inside, especially if it's a layered cake like this. This video has such an anti-climax. It's like a movie where there was a murder at the beginning and the detective investigated the case and by the end before the murderer is revealed it cuts to black and the credits roll. Who's the killer? What does the cake look like inside?
I'd like to eat that but it's too much work, so I propably would almost never make it myself...except for a wedding or something like this. But what bothers me is why making such a tall cake? Nobody will be able to eat it, it doesn't really make besides appearance wise.
I'm curious where you're from, and whether covering the whole cake is normal where you live- or if it's just a personal preference. I've never actually seen a frosted cake without the whole thing covered. Glazed, yes, but not frosted.

The Netherlands. I don't know what the norm is, but I've never seen it at birthdays no matter whether the cake is self-made or bought.
It looks nice, but coconut in lemon curd would taste like slightly soggy wood-shavings. It's a VERY poor idea. Don't do it.
