I only recently discovered Uncle Roger. Never knew this guy existed. First time I saw him was on one of Guga Foods videos, where Guga taught him how to make steaks. And I loved the humor. I dont know how I never knew about this guy. But keep up the great jokes and reviews. Its making my days better. And by recent, I mean I only saw it less than a month ago.

And for someone who think that you allergies with MSG. In medical is not sure that it can be allergy. You will feel thirsty after you eat MSG because you just eat sodium.

Bro your favourite restaurant probably uses MSG. It's called Ajinomoto here(which is the name of the company that invented it btw). it's a lot more common than you think.
Most fastfood uses it, not often used in homecooking though. I bought it and it makes almost everything a little bit better!

I tried so many uncle roger recipe's taught by you... all are very easy to make and tastes awesome,
I also upload my all recipe videos on my RUclips channel 😊😊
Here is the recipe:
Ingredients:
• Oil
• 4-5 Cardamom Seeds
• 2 Green Chilis
• 2 tablespoons Ginger Garlic Paste
• Red Chili Powder, to taste
• Chopped Tomatoes (fresh or canned)
• Salt, to taste
• MSG (optional, for the adventurous)
• Cashew Nuts (omit for nut allergies)
• Water, as needed
• Kasuri Methi (Fenugreek Leaves)
• Koya (Dried Milk)
• Chicken Legs (preferred over breast for flavor)
• Hang Yogurt
• Lemon Juice
• Mustard Oil
• Garam Masala (homemade preferred)
• Coriander, for garnish
• Chopped Ginger, for garnish
• Cream, for finishing
• Sugar, a pinch (optional)
For Makhani Gravy:
1. Prepare the Base: Heat oil in a pan. Add cardamom seeds, green chilis, and ginger garlic paste. Stir until fragrant.
2. Add Tomatoes: Incorporate red chili powder and chopped tomatoes. Adjust the sourness with the type of tomatoes available.
3. Season: Add salt and MSG (if using). Stir well.
4. Simmer: Add cashew nuts and water as needed to achieve the desired consistency.
5. Enrich: Incorporate kasuri methi and koya to enhance the gravy’s richness and creaminess.
6. Blend: Once cooked, blend the mixture until smooth, ensuring a buttery texture.
For Chicken Marinade:
1. Season Chicken: Apply ginger garlic paste, a bit of salt, MSG (if using), chili powder, garam masala, and kasuri methi to the chicken legs.
2. Add Yogurt: Incorporate hang yogurt and lemon juice, ensuring the chicken is well-coated.
3. Marinate: Let the chicken marinate for at least two hours for flavors to meld.
4. Cook: Skewer the chicken and cook for 12 minutes, until perfectly charred.
Final Assembly:
1. Combine: In a pan, mix the makhani gravy with the chicken, adding mustard oil, a pinch of sugar, and extra spices as desired.
2. Simmer: Cook until the chicken is tender and the gravy thickens.
3. Garnish: Finish with cream, chopped ginger, and coriander. Adjust the seasoning to taste.

The real reason why Chef sid didn't use MSG was because indian cusine already has spices and flavors that are far better than what MSG provides. MSG is mostly used in foods with less spices and vegetables. It is basically a flavor agent that gives bland food taste and flavor.
