@@lunaballuna put coconut milk, ginger in your rice with a pandan leaves(ignore if you don't have) as well if you're going to make nasi lemak(that's what 'lemak' is for, the fat from coconut milk) and a pinch of salt. If you don't have palm sugar, can substitute it with regular sugar. Taste as you cook to adjust to your preference.

Broke dude here, when using dried out spices you can put them on a thin cloth and lightly mist with water, wait just a minute and then pat dry. It doesn't fully rehydrate the leaf but it does give it some liquid content which helps flavor a bit. It won't be a huge change but it does help.

Did you at least try one to see what it tastes like, or did you not eat it because of irrational fear? Sardines and anchovies are common in many "White people's" culture, including Greece, Italy, Spain and France. I often do an Italian style sauteed sardines and capers in spaghetti dish.

Apparently "Makan" has been withdrawn from publication. I found this intriguing and also a bit worrying: Haigh is a much-feted chef and celebrity who has earned a Michelin star and even appeared on the famous "Uncle Roger" videos. She has also made her name through touting her connections to Singapore and her roots here. I decided to get hold of both books to conduct a comparison, and ascertain the truth myself. What I found was rather disturbing: it seems there are parallels not only in the recipes, but also in the structure of the cookbook and perhaps most distressingly, allegedly personal recollections. The following images and comparisons will demonstrate my point. There are many other instances which I spotted, but I felt myself becoming a bit disgusted, especially when it seemed the memory of someone else's mother was being somewhat appropriated. To date, I haven't seen a statement from Elizabeth Haigh or the publisher, Bloomsbury Absolute, and I do hope to see one. If you don't have palm sugar, can substitute it with regular sugar. Taste as you cook to adjust to your preference.

Broke dude here, when using dried out spices you can put them on a thin cloth and lightly mist with water, wait just a minute and then pat dry. It doesn't fully rehydrate the leaf but it does give it some liquid content which helps flavor a bit. It won't be a huge change but it does help.
I like how Auntie Liz looks when she cooked. She looked very confident. She also handled Roger nicely.

Did you at least try one to see what it tastes like, or did you not eat it because of irrational fear? Sardines and anchovies are common in many "White people's" culture, including Greece, Italy, Spain and France. I often do an Italian style sauteed sardines and capers in spaghetti dish.

I came across a post by Sharon Wee, author of the cookbook and memoir "Growing Up in a Nonya Kitchen" (Singapore, 2012), stating that some recipes and content from the book had been copied or paraphrased in Elizabeth Haigh's cookbook, "Makan" (London, 2021). Apparently "Makan" has been withdrawn from publication. I found this intriguing and also a bit worrying: Haigh is a much-feted chef and celebrity who has earned a Michelin star and even appeared on the famous "Uncle Roger" videos. She has also made her name through touting her connections to Singapore and her roots here. I decided to get hold of both books to conduct a comparison, and ascertain the truth myself. What I found was rather disturbing: it seems there are parallels not only in the recipes, but also in the structure of the cookbook and perhaps most distressingly, allegedly personal recollections.
The following images and comparisons will demonstrate my point. There are many other instances which I spotted, but I felt myself becoming a bit disgusted, especially when it seemed the memory of someone else's mother was being somewhat appropriated. To date, I haven't seen a statement from Elizabeth Haigh or the publisher, Bloomsbury Absolute, and I do hope to see one.

Postscript - a list of some further instances of copying:
Wee: “My mother, like many of her friends, placed their most frequently used condiments and ingredients within easy access while they cooked. Hence, post-natal mothers were given lots of ginger to ‘beat the wind.’ In my case, a backache, especially in the winter, was often remedied with a knob of ginger, with the sliced surface dipped in brandy. The brandied ginger was used to rub my back and it left red streak marks, indicating the wind in my flesh and bones. It always worked.
The ginger flavour is strongest just beneath its skin. Therefore, leave the skin on to get the most of the flavour.”
Haigh: “Ginger is thought to have healing properties - pukol angin (to beat the toxic gases and dampness out of you to relieve aches and pains). This is why postnatal mothers were given lots of ginger to ‘beat the wind’ . . . The strongest ginger is just beneath the skin, so to get the most flavour out of it don’t peel it.”
Wee: (from Chillies entry in the ingredient glossary): This particular type had been developed in Holland so that the Dutch could replicate their favourite Indonesian dishes back in their homeland, far away from their previous colonies. . . . My mother . . . always threatened to smear our lips with chilli paste if we ever told a lie. It was an effective tactic.”
