Second is milky style, you put the coconut later just like Mark's mother-in-law did in the video, and don't let the coconut oil separate off. 2) Using salt in curry soup is very Thai old school of cooking soup. My Thai mom prefers salt too when she cooking curry. Traditional Thais tend to make soup or curry in a big pot at once for whole family, even for several meals. Thus using fish sauce is the such a waste of ingredients because shrimp paste smell is much stronger than fish sauce and salt are much cheaper. It's more proper to use fish sauce as table season that put a lot amount in to the pot. 3) Some Thais, also my Thai mom, add some chilli leaves in the paste, too. To give more greenish colour and to decrease amout of chillis in case she's cooking for young children who cannot handle strong hot spicy food.

They are from the south of Thailand. Thai people cooking different it depends where they are from...Central Thailand we fry the curry paste with coconut cream first. The other part of Thailand they not usually use coconut melk in their food.
I think the main reason she dissolved the curry paste and chicken in water first vs. stir-frying the coconut cream with curry paste was because free-range chicken (ไก่บ้าน) is very tough and needs to be stewing for a bit so it's more tender. She is also using bone-in chicken. Very different cooking process than using just the meat.

Thai Green Curry and Tom Kha Gai soup are two of my favorites. In my opinion, Thai food is the best Asian food, and possibly my favorite kind of food in general. I love sweet, savory, and extra spicy. I'm white, but I don't get down with Jamie Oliver type food. Taking seeds out of chilies makes no sense to me.

In Thailand the households which eat Brown Rice are usually houses like Mark's which has elders in because of the health benefits. But when there's younger people in the house too they usually, when cooking rice, add equal part normal White Jasmine Rice in also so it's easier to eat.

Another thing I would like to share is it is so true that many cooks don't put fish sauce when they make food. Fish sauce makes the taste of the food drop. We will put fish sauce when we are ready to eat food. That why we have a small bowl of chopped Thai chilli pepper with fish suace ready on the dining table.

They are from the south of Thailand. Thai people cooking different it depends where they are from...Central Thailand we fry the curry paste with coconut cream first. The other part of Thailand they not usually use coconut melk in their food.

I think the main reason she dissolved the curry paste and chicken in water first vs. stir-frying the coconut cream with curry paste was because free-range chicken (ไก่บ้าน) is very tough and needs to be stewing for a bit so it's more tender. She is also using bone-in chicken. Very different cooking process than using just the meat.

Thai Green Curry and Tom Kha Gai soup are two of my favorites. In my opinion, Thai food is the best Asian food, and possibly my favorite kind of food in general. I love sweet, savory, and extra spicy. I'm white, but I don't get down with Jamie Oliver type food. Taking seeds out of chilies makes no sense to me.
Even in Hungary we know paprika's heat starts at the seeds (or if there aren't many, only at the ends, then at the so-called 'veins' inside).
Nah..Indonesian food always the best. With more than 1k different tribes we have thousands different delecious food.

In Thailand the households which eat Brown Rice are usually houses like Mark's which has elders in because of the health benefits. But when there's younger people in the house too they usually, when cooking rice, add equal part normal White Jasmine Rice in also so it's easier to eat.
We mix brown rice and sticky rice and it is amazing. The contrast in textures is really nice! Try it.
Yea i got forced to eat brown rice sometimes because its healthy but adding half jasmine and half brown rice in the mix, making the rice taste abit better than fully brown 😂

Another thing I would like to share is it is so true that many cooks don't put fish sauce when they make food. Fish sauce makes the taste of the food drop. We will put fish sauce when we are ready to eat food. That why we have a small bowl of chopped Thai chilli pepper with fish suace ready on the dining table.

Haha I'm Mexican and my wife is Chinese, i always used Habanero for heat in my dishes, but the wife brought those little red Thai chilis for her Sichuan cooking from the Asian market one day...holy shit! Way more spice! I use those red chilly allot for my Mex cooking now. Fuiyo!
