The golden fried rice technique is actually one trick I learned for when you have to use fresh rice. I dunno if that's why Esther used it, but the fat coating prevents the grains from sticking together, especially important for Japanese and Korean varieties of rice. The method I use is one (whole) egg in the rice, the rest scrambled like normal.

I like Esther, many good tips, and authentic way to do fried rice. At my hometown we also mix the liquid whole egg with the rice, so that they blended perfectly.
Yeah, it's certainly not a new thing using the whole egg. It's a slightly different texture as well, not sure which I prefer. I tend to swing between both methods.
I think it's cute that Uncle Roger brought he on stage for his comedy show on NY. Also the day old rice is something that so many people forget but it is so necessary for a really good crunch.

I REdiscovered MSG after years of believing the rumors about its health risks and learning that there really isn't any health risk when used in moderation (just like regular salt), and I've officially fallen in love with this secret ingredient, it really kicks things up a notch and my fried rice tastes sooo much more like take-out with the MSG! Correct. Everything has to be ready so when the cooking starts, it's high heat, fast, non stop stirring and tossing. Wok hay ftw. I don't mix the yellow with the rice like that though. It will affect the wok hay effect because it is soggy. Having the rice dry is the whole point of using day old rice, wok hay. I fry the yellow earlier before the rice and (optional) put it in later or use the white later with some other cookings.

The golden fried rice technique is actually one trick I learned for when you have to use fresh rice. I dunno if that's why Esther used it, but the fat coating prevents the grains from sticking together, especially important for Japanese and Korean varieties of rice. The method I use is one (whole) egg in the rice, the rest scrambled like normal.
I learned that technique thanks to watching the original Iron Chef.

I like Esther, many good tips, and authentic way to do fried rice. At my hometown we also mix the liquid whole egg with the rice, so that they blended perfectly.
Yeah, it's certainly not a new thing using the whole egg. It's a slightly different texture as well, not sure which I prefer. I tend to swing between both methods.
I've gotta say, my number one favorite thing Uncle Roger does is mocking "Mr. Chili jam" in every episode.

I REdiscovered MSG after years of believing the rumors about its health risks and learning that there really isn't any health risk when used in moderation (just like regular salt), and I've officially fallen in love with this secret ingredient, it really kicks things up a notch and my fried rice tastes sooo much more like take-out with the MSG! I'm so pleased. I love wok cooking and how simple, quick and flavorful a lot of Asian wok dishes are. Thanks for the cooking tips!

i saw the original , that Uncle Roger reviewed here, some weeks ago and was very impressed with aunty Esther and her clear explaining of what and why she was doing the steps, you can see her passion for food and creating culinary delight.
yeah, there's only one or two of the pro-cook choices I've been a bit suspect with. Most of the time, they're very solid on explaining how to really stretch and maximize a handful of cheap ingredients.

Correct. Everything has to be ready so when the cooking starts, it's high heat, fast, non stop stirring and tossing. Wok hay ftw. I don't mix the yellow with the rice like that though. It will affect the wok hay effect because it is soggy. Having the rice dry is the whole point of using day old rice, wok hay. I fry the yellow earlier before the rice and (optional) put it in later or use the white later with some other cookings.
