To be fair, Gabi is basically trying to follow the $242 recipe, even using the crab shell as the ‘plate’ as the recipe stated. I kind of imagine if chef Ester does it, it might probably look more or less the same. Nevertheless, I want to try both dishes, both looks delicious and gorgeous.

The golden fried rice technique is actually one trick I learned for when you have to use fresh rice. I dunno if that's why Esther used it, but the fat coating prevents the grains from sticking together, especially important for Japanese and Korean varieties of rice. The method I use is one (whole) egg in the rice, the rest scrambled like normal.

Glad you found out about Esther. I have worked with her in past in kitchens and she is beyond a badass cook. She knows her shit and can also run a kitchen as chef.
