- Tapa or “Tapsilog” (tapa, sinangag, and itlog) is an essential breakfast staple in the Philippines. Abi Marquez is testing three popular tapa recipes on the internet to find out which version is the best one for your tastebuds.
From Judy-Ann Santos Agoncillo, Pagkaing Pinoy, to Chef RV, we are excited to taste the three similar, but also very different recipes that our panel of “judges” will anonymously rank according to their taste preferences. Which one will stand out from the rest? Watch until the end to find out!

I like my Tapa "salty" with sinamak as sawsawan. Perf for me yung kay Juday.
Yung kay chef RV actually ang ginagamit kong recipe sa tapa business ko. May mga iniba lang akong konti, imbis na 2 cups of soy sauce 1 cup lang then Half cup ng knorr at half cup ng oyster sauce. At d na ko nag lalagay ng asin. Also may suka din ako nilalagay. Tapos salang na sa smoker para tinapa talaga.

Filipino "tapa" and Spanish "tapas" are completely unrelated. The Filipino word comes from the old Tagalog word for "smoked fish/meat", which became applied to cured meat. Although it still survives in another word: "tinapa", which now exclusively applies to fish.
Where did you learn this? I am a Fil-Am and I am trying to learn more about Filipino. Do you have any book suggestions?

@@kgpalermo360 I posted a longer reply detailing the cognates in other languages, but FEATR's filters keep removing it for some reason. You can probably see it in the notifications though. If not, go look up the source I gave. Tell me if you're considering a career in linguistics. LOL. Chef RV's recipe is what i follow most of the time.
Parang ang bistek na lasa is yung kay Juday, the second one parang adobo style. I will try the third one though, pero aalisin siguro yung balat. Thanks for another easy ulam idea.
Saka alisin na din yung baking soda, mag rereact lang yan sa gagamitin mong pampaasim, either kalamansi o suka.
I like my beef tapa very simple lang. Toyo, kalamansi, garlic, pepper marinade only. Then small, slender slices of tapa na hindi thin. Then prito lang sa marinade din. Sarap ipartner sa sinangag at kamatis. 😍
No. 2 is an old fashioned (native) way, and it's the best for me ✌️♥️

So...I did the baking soda trick to tenderize the meat and I used lemon instead of calamansi. It started to fizz. This is because the baking soda neutralizes the acid in the citrus and releases carbon dioxide (probably why the blender mixture was also foamy...maybe the cola as well). I started to think that if the baking soda neutralizes the acid, then the tartness taste that I like would be neutralized as well and lose the tartness. I tested it and cooked a couple strips. I was right. It was lacking the acid I wanted. Citrus and baking soda shouldn't be mixed as they neutralize each other; but your meat might get tender. So I started over and made the marinade without the baking soda. Much tastier.
Yeah the calamansi neutralizes with baking soda, with a product of water and salt (called neutralization) but since the calamansi and baking soda is relatively a weak acid and base, the product after the reaction is very few, but enough to contribute to additional salt and water content of the marinade, and possibly lessen the effectiveness of tenderizers (calamansi and baking soda)
Dito samin sa malabon, tapang kabayo 💪🏼 Pinapakuluan namin sa sprite, soy sauce, sugar and spices. Tapos prito at patutuyuin gamit yung pinagpakuluan 🫣💓

I prefer the version with lots of garlic mixed with vinegar. A little sugar would make it perfect for me. Taste is subjective. All three recipes are great ! Tapsilog in Toronto, Canada costs at an average of $8.00.
Though I spent time in the Philippines, i.e. a lot of street food. I guess never really got to understand all the different Filipino dishes and I would like to try to cook some Filipino food on my channel. I thought I might move to the Philippines November after being retired. Have a need to learn how to cook more food for the Philippines, I have only one recipe of my channel and that is for adobo. Thanks for this great video. I will stay tuned to learn more about the food of your great country.
I tried pagkaing pinoy recipe today. I just used halg kg and adjusted the ingredients a bit. I'll marinate it overnight and we'll see. 😊

Hi Abby! In my home, we use Worcestershire, Kikoman, and few drops of calamansi juice, and lots of garlic too. Gamit namin sirloin tas mdaming taba para suuper saraaap!

Around 12 years ago (maybe even more), I had Auring’s Beef Tapa (Auring’s Batangas Beef Tapa) for the first time. It changed my taste for Tapa ever since.
I don’t know how and what they use to marinate the beef but the simplicity of how it tastes is perfection.
I like getting the cut with the most fat, the Super Mega Tapa, and if you cook it well, you get the perfect balance of fatty, oily and a pure beefy taste that I’ve never had with other tapa recipes or tapas from popular restaurant chains.
Chef Abby, if you are reading this, it is worth your time to try this if you haven’t or to feature it in one of your videos.

Chef RV's tchniques is parang yung ginagawa nila sa galbi sa korea. Which is nice kasi mas nanunuot talga yung lasas ng marinade.

My late grandmother uses 7-up as part of the marinade of her horse tapa.
Does she still use Baking Soda for marinade? I think the sprite/7-up are sometimes used for tenderizing meats.

I miss my mom’s crispy dried beef tapa. I wanted to try Oscar’s dried beef tapa from Quezon but never got around to ordering one online. Hope you will have time to show us how it’s made.
If I'm the one making my recipe, I will use Sprite / Pineapple tenderizer then when cooking throw some chili flakes to add spice to it. Ilonggo style + Bicol style combination.
It goes to show that a a simple recipe and preparation has more flavorful taste than the food with so much ingredients.

I like simple marinade, vinegar, salt, garlic and ground pepper .. then fry the beef and like it to be crispier .. (no soy sauce so it is not wet)
