- Kapampangan heritage pork dishes are truly unique in their own way. We searched the town for beautiful stories of locals who cook and serve delicious family recipes in their homes. Sisig Matua, Tidtad, Asadong Matua, and Piticharon-these are the heirloom recipes that Kapampangans have passed down from many generations, so that the unique heritage of Kapampangan food will continue to prosper.
We chronicled the detailed processes of cooking these dishes and the stories behind them. This is one of the most heartwarming stories that we have featured, so we hope you enjoy it as much as we loved filming it.

Among the Filipino food channels I have watched, FEATR is my top 1. It not only entices you to try the dishes shown, but it educates you and encourages you to be proud of the food in your place more than the food; it's the story that makes it taste better.
The thing that struck me the most is how the kapampangan cooking is similar to french cooking when it comes to having several cooking techniques involved in making one dish and the amount of time and care put into making it as well. Fascinating!

I'm happy mcmundo/basisang was featured in this channel!. I miss my hometown so much and this brings a lot of memories of my childhood! i remember when i was a kid, the sisig and tidtad there is always sold out and you need to wait to be seated to get to eat! I'm sad that the original walls and ceilings were demolished and i hope they get all the credit they deserve! Tatay here always tells you this same exact story he told your channel when you ask him how they started. You missed iconic halohalo of malta there also on the same location near the church!

we have a kapampangan neighbor before but now an immigrant in the US. one childhood memory that stands out is whenever they have handaan, we are always invited and i got to taste the most delicious food ever. recently she came home for a visit and i asked her how she cooked certain foods that i remember eating in her house. she was so gracious to share to me her recipes. now that is one legacy that has been passed on. thank u aling juaning!

I can still remember during my childhood my elders will ask me to buy pititian on a sari-sari store. The pititian will be added for the Friday munggo. :D

Actually in terms of a heritage of Filipino Cuisines specially in Pampanga, Nueva Ecija are connected because it's a upper part of Pampanga during Spanish Era. You will found some ingredients and delicacies same here in Nueva Ecija. I guess the part 2 of Pampanga showcasing Nueva Ecija also. Love here from Kuwait.
I'm proud to say na almost all the Kapampangan food kahit yun sa mga karinderia at street food ay masarap kasama na mga sauces at juice na prepped.

A lot of our Filipino dishes do take time to cook and cannot be rushed. The longer it last the better it taste. Our sinigang , adobo and bulalo , to name a few, do taste better the following day or the next.

majority of tidtad(dinuguan) here in pampanga is cooked using intestines as the main protein, its not something rare, I've lived all my life in pampanga and i've eaten a bunch of tidtad and people here knows how to clean the intestines properly.

There are more unique Kapampangan dishes not featured here. I hope you broaden your research to little known heritage dishes using uniquely Kapampangan ingredients.
I don't think this short feature either intended to itemize the province's representative dishes or raise the profile of more obscure ones. It was an earnest meditation on how Kapampangans treat their cuisine. All featured cooks are (i) concerned about preserving food heritage/legacy, both personal and communal, and (ii) espouse the "slow food" approach to cooking -- with the choice of pork dishes almost incidental. With that in mind, the research was only as broad as it needed to be. I thought it very moving.
I think Featr will feature more given na they have ton of videos sa Quezon Province and the Cordillera. Hoping! Fingers crossed!
Agree it needs part 2, i havent seen the wetlands menu/cuisine here. Also, the suam na mais and adobong hito in green sauce cooked with alagaw are missing!😂
Wetlands menus with Chinese influences; 12+ ways to cook bangus & a vegetable cooking method called Alpa are just some unique dishes that haven't surfaced in any discussion so far.

I will say most but not all. However, the new generation of Kapampangans are I think lack the patience to cook or prepare home cooked meals as everyone is busy working and find take aways and eating out as convenient. I think most Kapampangans showcase their cooking skills and family recipes during special occasions like fiesta, wedding, Christmas, New Year, etc. Some techniques and preparation are passed down from every generation and every family has 1-2 members that are interested in continuing the tradition of cooking their version of meals like yes the asadong matua, sisig, tidtad, etc. every town and family have their own version of it. Plus mostly the cooks don't rest on what they know they continue to evolve their dishes by trying out new or incorporating or modifying the dish based on their taste buds or exchanging recipes with their fellow cooks that makes the Kapampangan food ever evolving rich in tradition and culture.
