wow so many of the dishes are the same as in Guyana. I dont understand why they would take away the milk from the calf, as the calf would need it to be strong. But Indians were farmers so I guess they knew what they were doing

My Mom made this often with just regular powdered milk. Also she used brown sugar to give it a more caramel look. Delicious!

I use to put lime juice in fresh cows milk to get the curds.

My mom just followed this recipe to a T and it never curdled even after an hour on the stove. Don't know what went wrong!
It could mean either the milk didn't have enough solids or you needed to add a little sugar to help it curdle with the lime juice.
