I find it interesting that it did not want to stick to flour tortillas, I did it with corn and they came out awesome. The corn tortilla actually had a but of a crunch but not too much and a bit of a chew. Was very tasty. And it was really quick to make. Good job

Quick follow up on your great idea after watching your video. My wife has Alpha-gal so she cannot eat red meat so I tried this with turkey burger and spices. Made 4 oz turkey balls, smashed them with spices and then basically duplicated your idea. They came out great, she like it and wants it again this weekend when the kids come up. Thanks for helping round out a tough menu for alpha-gal sufferers.
Have you heard about the SAAT acupuncture treatment for Alpha-Gal? My son got AG about 3 years ago and was told to stop eating meat. We did that for a year (Ostrich and Emu are great red meat substitutes btw), but then he was treated with SAAT. After the 1st treatment ($200), he was completely nonreactive to AG except for a mild reaction to cheese. We did a 2nd treatment and he's now completely nonreactive and has been eating everything for 2 years now without issue. It changed his life.

You are right about having everything ready to roll, these things cook fast. I lay parchment paper on a tortilla press, ground beef on the parchment and then the tortilla. Smash them flat, the beef will stick to the tortilla nicely and be very thin. I season the meat and then cook. American cheese is a requirement. The burger sauce is mayo, creamy french dressing, fine onions and dill pickles. Relish would work for the pickle but we like dill pickles not sweet pickles. Delicious.

Then, when done I flip the meat taco, the put the cheese taco on top of the meat. So I have two tortillas with with cheese and meat between them. For a smash taco these were nicely filled most I’ve seen don’t use enough meat to get the spread needed to cover the tortilla and I so hate when there is excess tortilla hanging out.

I like them filled with chipotle onion slaw. Slivered cabbage, red and green onions, red peppers, and cilantro tossed in chipotle ranch sauce.

You can fix the sticking problems by flipping the ball before you smash it. The small amount of cooked area helps.

Put a fresh corn tortilla on shash then follow our ser both sides and sick in the taco rack let them tortilla become crunchy and top. Then eat good.

Tip, if you leave the spatula on the grill and let it get hot, the burger won't stick to it.
Add taco seasoning to the hanbuger.
Traditional smashburger if that is even the term LOL. Means that you smash the hamburger onto the tortilla not the other way around
