I think you have captured the escence of the Taco... take anything you like, put it in a tortilla with herbs and salsa/hot sauce and you are good to go. That looked delicious.
I'm really digging Yellowbird! I had a Cajun/Korean restaurant that was lost to the pandemic that made a ghost pepper sauce very similar to theirs. Yellowbird's blue agave sriracha - amazing!

For anyone watching, please use a cut proof glove or the tool that comes with a mandolin to cut anything on it. Its easy to seriously injure yourself with one of those. Im guessing that chef Tom had a cut proof glove under the black one, he always seems to be wearing multiple sets of gloves at a time. It's like glove-ception Love this channel by the way, just stay safe cooking everyone.
You guys should make and sell bibs. Imagine a box like plastic wrap and its all bibs with your logo. And then there could be the deluxe bib set for the hoity-toity purists who launder such things.
