What a brilliant vid Twice fried is literally genius, that way I can use the second fry to take them up to really quite dark outside and still keep them soft and oozy in the middle. The resulting almost burnt surface is a slightly bitter onion flavour I myself love in contrast to the sweetness of the onion inside, now I don't have to sacrifice the moist inside for it any more. Onion bhajis are lovely just dipped but make a flatter patty shape in the pan and then slip one on top of your burger with all the normal salad fixings and a juicy slice of tomato - massive upgrade That these can be made ahead and then heated in the oven as you're assembling your burgers makes them a must, you can even miss out the spices for a clean onion burger taste but I never would
