    What a brilliant vid
    Twice fried is literally genius, that way I can use the second fry to take them up to really quite dark outside and still keep them soft and oozy in the middle.
    The resulting almost burnt surface is a slightly bitter onion flavour I myself love in contrast to the sweetness of the onion inside, now I don't have to sacrifice the moist inside for it any more.
    Onion bhajis are lovely just dipped but make a flatter patty shape in the pan and then slip one on top of your burger with all the normal salad fixings and a juicy slice of tomato - massive upgrade
    That these can be made ahead and then heated in the oven as you're assembling your burgers makes them a must, you can even miss out the spices for a clean onion burger taste but I never would

    🤍👋 Hi Rik , BC Thank Yous , that looks too good. Inspired to make. Not eating Mint anymore , so maybe I will try to make that Indian Taramind ( I picked up packet of dried Taramind from the Mexican market last month thinking maybe I will try to make that ) sauce to go with the Onion Bajis ( or Pakoras ) which I havent tried making before.
    All Your recipes and techniques are really awesome. I just watched Your Sweet and Sour and Fried Rice take out , to Veganized too .
    I usually get the Kung Pao Tofu

    Can you tell me the name of the knife used to chop the onions? Thanks!

    • @BackyardChef
      @BackyardChef  9 месяцев назад +1

      Its a cheap knife from penguin. The thing is with knives the thin blades whiz though. say onions cabbage etc. I don't have hang ups on knives I use practical products I don't go for the expensive. The blades just do not pass through the ingredient you are chopping. Thank you. Best, Rik

    If you don't have semolina, will regular all purpose flour do?

    • @BackyardChef
      @BackyardChef  8 месяцев назад

      The semolina is there to give a bread type taste and feel to the inside. If you miss it out you will have the same type of Bhajis, similar to a takeaway. Thank you. Best, Rik
