Onion Bhaji is a delightful Indian appetizer that is hard to resist. With a crispy exterior and a deliciously spiced interior, it's a perfect snack to enjoy with your favourite dip.
Today I share my easy Onion Bhaji recipe which is Restaurant Inspired. These are perfectly balanced in spice and are delicious served with my two favourite Chutneys -

Ingredients:
400g onions finely sliced.
300g gram flour (besan or chickpea four)
1 tablespoon of dried fenugreek leaves (kasoori meethi)
1 teaspoon + 1/4 teaspoon salt
1 teaspoon of the following:
Coriander powder
Deghi mirch (Kashmiri chilli powder)
Garam masala
Dried chilli flakes
1/2 teaspoon turmeric powder
1.5 tablespoons of coriander seeds and cumin seeds coarsely ground.
A good handful of fresh chopped coriander
Oil to fry
Water

Years ago I watched a program with Madhur Jaffrey when she had a guest who made onion bhajis. He used just onion and besan flour and just kept mixing till it ended up a batter consistency.Whatever spices you want to use are then added before frying as usual.

I tried these last night and they were wonderful. A little too much coriander with the fresh, powder and seeds.
So omitted the powder for the second test batch and a little more chilli flakes and they were perfect for me.

Just goes to show there are more ways of doing this. I make my batter for bhajis quite thin; not quite tempura but close to it. I have never made them with batter as stiff as here. Spices, yes; my own garam masala and a balti spice mix which is good for most applications. I use to go to the Lahore restaurant in east London years ago and their bhajis were made with my style of near tempura batter. I think a stiff batter runs the risk of too much floppy stodge in the middle.

They look (and sound) fantastic. A very economical dish too. I always use too much batter with too much water and end up with a stodgy mess, uncooked in the middle and burnt on the outside. Your recipe and method looks much, much better.
Use as less water as possible. Onions are filled with water so their water will make the batter thinner

For Gas Hob user
half full with oil at 170 Celsius. You want to use a thermometer to keep this temperature around this point so the bhaji cook thoroughly but do not burn hope it helps

I wonder if we can use the almond or coconut flour ? The wheat four is not healthy but onions are 😏and wouldn’t be easier to have the onions cut smaller ?

What’s the difference between a bhaji and pakora?
Pakora normally has onions and potatoes whereas a Bhaji is just onions only.
would be nice to see if these can be done in an oven?? deep frying seems like a lot of work!!!
You can try, but i dont think they will have the same taste or texture

I definitely did not need all those spices to make it delicious.

I'm not sure, probably require less cooking time or the temperature of the oil might be too high.
