If I had to guess, he uses crab cakes as a familiar way to test a kitchen's cooking. If they do it well, it shows, and if they cannot cook, it shows. It paints a clear picture of their abilities. He seems to do the same with ravioli in restuarants that serve them.

Considering that I don't really do much cooking and I prefer to finish my meal and go back to what I was doing and sometimes completely forget to eat for a bit? Yeah, he would hate my meals. I know these shows weren't shot as comedies, but at least 46% of the time I'm laughing my ass off. Gordon's disgusted yet cheerful interactions with wait staff and the lack of self-awareness by pitcher-chugging, booger-snorting owners and chefs is pretty epic and will still be instructive and hilarious in a hundred years.

This place is now known as the 1754 House and is entirely remodeled with new owners. I currently work there, and it is thoroughly fantastic, between the management, food, and basically everything you could imagine. Watching these episodes is fascinating, comparing how it is now to what it was before.

Ofcourse, just because I haven't heard it doesn't mean no one is using it, but it does mean that it's not a common way to describe food.
If I cooked for someone and they called my food 'institutional', I would probably reply with something like: 'I don't know what the fuck that means.' People usually stick with something simple. It's good, it's bad, it's greasy, it's moist. You don't whip out the 4 or 5 syllable fancy words for a regular, working class diner meal. Save that shit for the fancy places.

Ever work in a kitchen? It's hot. Now add 300 pounds. It's hotter.
Imagine a hot, 90 degree summer day right next to the beach. Then, add about 40 degrees to that.
That was a kitchen I worked in for years - no air conditioning, and very poor ventilation. It was like a goddamned sauna in front of the line - and worse behind it - for ten hours a day during the summers. Grills, ovens, fryers, and so on all running at the same time. I was as skinny as a rail, so extra weight didn't really amplify the height for me, and I still drank about four or five pitchers of ice water a shift. Even more on a busy day. All of the kitchen staff did, actually - we had a special rack of pitchers dedicated solely to each back of the house employee. You would start sweating within three minutes of clocking in and walking into the kitchen - and by the end of the shift, the deodorant you put on that morning would be long gone.
Granted, most restaurants have central air conditioning, in the kitchen as well, so it isn't that bad. Ours was, though. And I can't see that extra weight helping this chef.

The narration is all added in post production. Live audio recording on location is very difficult and often results in bad audio. It's common practice to overdub in post production if parts are not clear enough on the original taping.
