The reason behind the ganache being lumpy is due to the fact that you're not supposed to have the top part of the 'double boiler'or in this instance, the top pot, touching the water. It causes the chocolate to seize, as moisture gets into the chocolate due to condensation, which creates the lumps you see in this one.
I use a piece of cotton sewing thread to cut a cake into layers, put the thread around the cake where you want to slice, cross the ends of the thread together and pull the thread through the cake. then do it again at the next level. works GREAT! every time. By the way I love your videos.

If I would have made this I would have just done a chocolate drizzle over the top with some strawberries to garnish it with maybe a light dusting of powdered sugar

Stir it all together and add a teaspoon of butter (this will make is smooth and shiny). Works great, tastes amazing.
Now a "pro tip" for melting chocolate. If you want your chocolate to be all shiny when it hardens. You need to watch the temperatures. Its almost a science. If the chocolate gets too hot, its ruined and will be dull looking. Melt it at a low temperature. Now let it cool until its almost solid again, and then really slowly heat it back up to 22°C. There is a trick to check the temperature of 22°c. Just put some chocolate on your lips using a skewer. If it is neither warm or cold, its 22°c.
That cake does look good, but as a suggestion (just a suggestion) you could put more of the jam into the whipped cream and use that as the frosting and put strawberry slices on it for garnishing. You could even, as a variation, use blueberries, raspberries, or blackberries. I like that shortcake desert. Thanks. By the way, I love your Lazy Man Recipes.
one thing i do is heat the jam a little until it just starts to liquify but still solid enough to spread and the sponge soaks up all that jammy goodness mmmmm lol

if you coat the cake over a wire rack and put a parchment paper underneath you can coat it without the mess and even scrap up the excess

for the chocolate topping you could just get a can of chocolate frosting and microwave it for a few sec's on high then set it in the frige to chill
