This was during a time where I found on TV products both hilarious and fascinating, so sought reviews of them. But I didn’t watch much of him because I thought he was corny and boring. When Charlie made videos on him, I recognized him and was surprised to see how far he’s fallen. At least at one point, he was a rising star on RUclips.
Here ya go You take about 1 pound of tomatillos, and boil them with jalapeños and onion to taste, some chicken bouillon, some salt and pepper. Once soft, you blend it together with some water. After that, then put it on the stove to simmer. Meanwhile, you take corn tortillas and fry them in VERY hot oil until soft, usually less than two minutes. Plate up tortillas folded over on plate, then add green salsa to taste, and serve with beans, queso fresco, and sour cream

This is how I would make mine, and maybe with some Green Chilies, shredded chicken perhaps? It does look good, but I do not like my cheese cooked so much on top. I like it melted instead of baked.

I just wanted to comment on canned enchilada sauce. I noticed the sauce you get in Mexican restaurants tastes so good and canned sauce always has that same canned sauce taste. I've been making enchiladas at home with homemade sauce. If you can make homemade gravy or follow a simple recipe, you can make homemade enchilada sauce. There are lots of recipes on the internet. I haven't found one that tastes as good as the restaurants but they are all light years beyond canned sauce.
Oh my gosh. This made enough for twice what was shown, two big 8 x 12 pans. I loved the taste, but for heaven's sake stop with the "not authentic, not organic, not Mexican" comments. People, it's a simple casserole using fake Mexican ingredients. It starts with cheap packaged chips. If you like authentic or organic or true Mexican you should have had a clue at this point and moved on, and after a bottle of picante and then canned enchilada sauce I can't believe you were still there! I eat, therefore I am. For what it's worth, I did grate my own cheese, yay me. When I make it again, I will half it except for the beef and onions and I will add a little chopped jalapeno peppers because, Texas! Shut up. We loved it.
But they are misleading others that actually want to know what enchiladas look like... Its their fault for calling it that... If they called it a "MEXICAN CASSEROLE" no one would be offended... Btw people arent saying that it doesnt look good its just that those arent enchiladas.. thats all

ok. my last post on this. i made this recipe last night and gave away half because it was a bit much. however i have to say kudos on this. 3 thumbs wayyyy up. people dont get literal on the man. it does taste like enchiladas. isnt a tortilla chip a fried tortilla? well once the ingredients are blended with the milk to coat and baked the chips are back in their original form...taste and texture wise. anyway i saw a post saying they might as well make enchiladas than this. however ive looked at a lot of videos and making the sauce takes time and energy. this is a short cut hence the word lazy. taste=amazing u are only cooking the meat, opening and dumping, stirring. again hence the word lazy. end result. if u love the taste and aren't worried about the pomp and circumstance of trying it, you will love. if u dont have more than 2 or 3 in your house just cut recipe in half

My mouth was watering when she lifted the piece from the casserole dish! I'm thinking some salsa on the side for those that would like extra salsa. Quick, easy,simple and tasty family type food!
What’s disturbing is that they got the ingredients from stater brothers which is a store regional to the IE in California which means they can’t live too far from me 😂😂😭
The way we make them down here in South Texas is we use 1. 2 Cans of wolf brand chilie "beanless" 2.3 pounds of 80/20 ground beef with minced onions one onion 3.lots of cheese the kraft singles and also shredded cheese. 4. a whole package of corn tortillas The way you make it is you brown the ground beef with the minced large onion until cooked then you roll taquitos with the corn tortillas until you totally run out of ground beef and place it on a backing dish then you pour the chillie all over the taquitos and then you add the cheese all over then you bake until its all melty and warm then you eat the whole thing thats how you make enchiladas down here in South Texas.
I wanted to try something different for dinner so I tried this tonight and it's so good. I cut everything in half but still worked out great! Thank you for the great dinner idea. As for everyone else... they should quit bitching about what it's called and just try it. It's really good no matter what it's called! :) have a nice day!
If anyone is making this...definitely cover with foil until the last 15 minutes. Also, you might want to consider the salt in the chips. If there is a way to use lightly salted or unsalted chips, that would be better. I don't suppose the salt is much more in a plate of nachos. Actually, it turned out really well. The chips were tender almost like masa. I thought they would turn out tough...but no. I'm surprised but I would make this again. Thumbs up.
I think it would be better to mix all the wet ingredients with the cheese then do like 3 layers of chips, sauce, chips, sauce etc. That way it won't be as sloshy looking. Just as idea, still going to try it: D
