How to make the best Fraisier Cake - a classic French strawberry sponge cake

  • In this video I show you how to build up the Fraisier cake using genoise sponge, vanilla mousse, local strawberries and top it off with an Italian meringue.
    So light and fresh, a delight for the pallet - one of my favourites.
    A must to do !!!

    I made one this morning but didn’t do the Italian meringue just topped it with more strawberries as I had too many came out perfect and as a test I used the créeme Pat that I froze last week
    It came out fine I removed the excess humidity with a paper towel and just warmed the créeme Pat
    Will definitely make it again thanks Julien for your very amazing cakes

    I’m making this tomorrow. Bit nervous but have all my notes straightened out and waiting for a delivery of Kirsch. Will tell you how I got on. This chef is the best IMO 🎉

    You are an absolute master!! I watched this video with my mouth open. The way you handle the cake without effort. I am all nervous, hoping it doesn't fall apart. 😂😂 I've been studying how to make this cake for a few days now. I plan on making it tomorrow.

      Thank you!!!! It was a huge success! I watched all the videos several times and studied them. I was worried about the gelatin, because I live in the US and I only found gelatin powder. I am shocked that it actually turned out exactly right!! THANK YOU!!!

    Made everything and overall turned out pretty good but my vanilla mousse became grainy after a few hours in the fridge. Any idea what I did wrong or something I can do next time to prevent that? Thanks a lot, keep up the good videos 👍

      thank you dear , well ive been filmed by someone else before for over 8years , and ive been really disappointed with his attitude and bad back business , so i deside to start my own ...i need more consistency and regular video to upload to make it happen and get more subscriber , i will try

    Question, instead of torching the ring, why not just open the latch? It's a springform pan, right?
    Also, you should post all your vids on this channel! It makes no sense to put it on the cameraman's channel since he posts other content too.
