- My favourite cake to decorate! It's so pretty, looks impressive and delicious to eat. A fraisier cake is made with a genoise sponge, sandwiched with creme patisserie - the cake is light and luscious!

Recipe for a 6 inch ring:
150g egg
20g yolk
115g caster sugar
115g plain flour
18g butter
Creme Patisserie:
375ml milk
Vanilla
60g yolk
90g caster sugar
30g plain flour
30g corn flour
225g softened butter

How much butter is added to the Creme Pat?
Tried this and it went really well. However, when I came to build the cake, the sponge had shrunk and made it difficult to fill with the mousseline. Any tips or knowledge as to why it shrank so much (width not in height)?
Have you opened the door the door during the baking process or perhaps didn't release the cake from the pan straight away after you took it out from the oven?

Nadia S yes you can but I would recommend lining it with parchment paper or an acetate. I hope this was helpful!

Very nice! I have a question but you never reply to any of your viewers, however, I will try once again. I only have the ring mould that is expandable, can I bake my sponge in a cake tin the build in the mould?
Sorry! I try to respond but there are lots of messages and comments to get through! Yes you can still use these rings. I would line the ring with paper when you cook the sponge so you don't get a mark where the ring joins!

I don’t understand because in this video you use less egg yolk than you do in your other crème pâtissière video, but for all the other ingredients in this recipe for crème pâtissière, you use more of all the other ingredients. Can anyone explain this to me?
Hi. I love the look of this cake and want to make this as a 3 rd smaller cake for my daughters wedding - they are not tiered so it should work. Main question is will this be ok if I make it 2 days before eating? I’m going to to do a practise run too. 🤞🏻😀

No vanilla in the cake would make the cake not tasty. You added vanilla to the sugar syrup, but that's not the same.
