Just make sure to whip the egg whites until frothy (without adding sugar yet) at first, and when you start to see some consistency, start adding the sugar gradually (waiting until it becomes stiffer in between each sugar dump).

When u say “2 times” do u mean 160g cake flour twice as in 320g or just 160g

Perhaps eggnog? I believe it is condensed milk and it has a sweet taste to it
