I made this cake last week. I bake but I am NOT anything approaching a Pro. But what I am is a HUGE fan of this lovely woman. Her recipes are lovely. A few tips. 1. Assume it takes 2 days to make this cake so that it sets and it’s very “chilled” from extended time in the fridge. Especially if you serve this in a warm climate. Then serve it on day #3. 2. Make the strawberry cream mold on day 1. Measure all of your ingredients for the cake on day one but don’t bake until the next day (day 2), and make your simple syrup on day one. 3. Make your cake early on day 2. Make your white cream late on day 2 (this gives your strawberry cream plenty of time in the fridge. Note: Don’t skip the simply syrup because this keeps your cake freshest when it’s spending time “setting”. 4. I weighed the white cream and then divided in 3 portions to ensure I had sufficient amounts below the strawberry cream, above the cream, and then on top of the final layer of cake. I guessed at this but assumed the top layer was a much lighter frosting. I know this sounds fussy, but it helps you to balance volumes above and below the strawberry cream- it does matter. The outcome? My son- who has spent the last 2 “covid lock down years taste testing Joconde’s desserts. This is his favourite. Light, intensely Strawberryish, and visually and texturally stunning. I didn’t do the dusting or the food colouring because I couldn’t find any. But this is a delicate and beautiful homage to early summer berries. Such a fan of your work. I don’t know how you come up with your creations. But they are wonderful. (Orange Caramel Carrot Cake is so lovely). ❤️🇨🇦

I can say with confidece that Joconde's cakes are taste-guaranteed after having tried making cakes with several recipes. In fact, I had made a similar one from another You Tuber's. It came out good too if you say only the shape and design. But it tasted too sweet and too sour with too much cream cheese and yogurt. But this cake, as usual with Ms. Joconde's recipes, has soft, well balanced, and very elegant taste. I am sorry because the other Youu Tuber has a lot more Subscribers who actually watch the video only for entertainment but never try to make a cake by themselves.
I tried baking this one, but instead of the pink filling, I filled the inside with strawberries ans just covered them with mascarpone cream. Much lighter version, and it was still delicious!
I tried making it yesterday, but I fear some steps went wrong. The strawberry cream was a lot runnier when I finished it than yours was. I think that was my fault but I'm not sure how that went wrong. What I definitely did wrong myself is overmix the sponge batter causing it not to be as fluffy, as well as swapping gelatin for agar agar. The last didn't make my creams set as much as I hoped. Overall, even though not as good as how you did it, I love this cake. It's delicious either way

So i haven't really eaten the exact same cake in the Video but i've eaten a similar one so i hope at least that can help you. Uhm so it tastes very sweet and strawberry like. Also the strawberries inside the cake add a little bit of sourness to it. I cant explain it myself but i hope this helps. Good luck with your book!
I've made this cake 2x now, it tasted very sour or very sweet depending on how you process the strawberries. If you used cheap & sour strawberries, it will taste very sour when you bite in the strawberries. I took an extra steep to sweeten and glazen the whole strawberries on my 2x try with sugar before i put them in to lighten the sourness abit. Texture wise, chewy (tiny bit like jelly when its cool) and ice cream-like. I like the texture a lot, but it needs to be freeze to achieve a good texture. Leaving it in temperature room will make the cream too soft and not that good of a texture to bit. The best part of the cake is the small bit of strawberry puree in the middle, if you use good strawberry / sweeten it a bit, that is.
