    As someone who has been eating this and cooking this for many years i believe your methods to be absolutely sound and legit. Even the gravy. We only use Lawry's to season this in our family (apart from the pepper of course).

    I cook up some sausage or bacon and use that oil to start the roux. Adds another depth of flavor. Plus, obviously, lots of pepper!

      I thought of using some bacon fat that I keep in the fridge. So many people throw it out SMH. I also save chicken skin to boil down too make Shmaltz.

      You must truly be from "The South" (drum roll and angels singing) to bring up Okra in your comment -since nobody around here even knows what that is!
