    Looks delicious!! I’m drooling 🤤 I do have a concern though. I’ve tried double wrapping the spring pan with heavy duty aluminum foil BUT water still gets in leaving a soggy crust 😢

      It's an incredible cake! :)
      I've switched over to use extra wide foil, so there's no seam anymore. It works so much better!

    But I have a question; would it be possible to make this cheesecake (or any type of cheesecake) using only mascarpone? Because I don't really like to use cream cheese, it leaves a sour/bitter taste but I've got no problem putting mascarpone in desserts ;)

      I think you need to use the cream cheese and besides in cheesecake it doesn't leave a sour bitter taste and cheesecake is sweet, I recommend adding the cream cheese just to be safe :)

      +3moTional27 I recommend using cream cheese. The sour part you're tasting in cheesecakes is actually the sour cream. You can omit it from this recipe and replace it with heavy cream. An all-mascarpone cheesecake might not set the same way... :)

      Amaretto adds almond flavor. You can add more coffee, but also add a teaspoon of almond extract :)

      hello! you could just skip the amaretto or just add some almond extract,it just tastes the same and doesn't make a difference! And for the strong coffee,I add one and half TEASPOON of instant coffee in half a cup of water, tastes divine! Or,you could just follow Tatyana's recipe! hope this helped!

    Hi Tatyana , if I use 8" round pan and 1/2 of your recipe so do you think I should bake 315 F for 1hour and 45' too or lower the hit and time? thanks for your sharing recipe .

      +Gia BaoMinh I would keep the same baking temperature, but reduce the baking time, probably 1 hour, 20 mins or so. Just watch it carefully while it's baking

      Yes, let it cool overnight in the refrigerator, then remove the spring form :)

    Mine was 2 hours in oven at 315 f and after set overnight in fridge came out raw!!! I think needs at least 325 f

      +Heber Perchez Hmm, please check your oven temperature. Each oven can bake differently; you can install an oven thermometer for more precise temperature readings!

    I'm completely according to your steps,but my cake was not thick it's more liquated and there have some water in the spring form pan. Can you tell me why?Thank you!

      Hmm, make sure to double wrap or even triple wrap the bottom of the pan so water does not seep in! And if it's still raw in the center, just keep baking. I recommend turning the oven temperature down so that the surface doesn't burn, but bake for longer

      Hi! Welcome to my channel! You can just use more cream cheese in place of the mascarpone. For the amaretto, you can add a some almond extract or amaretto extract/syrup if you can find it! :)

    This looks awesome, but just to be advised, this isn't a true water bath, although still much better than no water at all imo.
    An actual water bath would have the cheesecake sit in a deep casserole dish and the water would have to come half way up the spring form pan. Many assume that the water is just there to create humidity in the oven, and although that is part of it's job, that is far from it's main purpose. The water prevents the cheesecake from burning/overcooking and overall just creating a much smoother/creamier end result, because the temperature entering the cheesecake never exceeds that of the water.

      TatyanasEverydayFood my only beef with the water bath method, is that no matter how many times I wrap it with aluminum foil, the water always seems to find its way into the cake. So after much research, I figured that putting the springform pan into a slightly bigger round silicone pan, does the trick. However, that would require a springform pan that does not have the lip around the base, such as the one you were using.

      That's a great idea! Yes, that's a problem for me, too. I started using extra wide foil that covers the base completely. It helps a lot but some water still seeps through!

      Are your pans fat daddios? They look exactly like it. I have what looks like that exact same spring form pan you used.
      What I ended up using in the end was actually a removable bottom cake pan from fat daddios and then a same size silicone round pan. The guy was like a glove and I had a perfect cheesecake.

      TatyanasEverydayFood because the batter is so liquidity it's hard to get the timing right last time it was under baked and this time I've burned the top. I've substituted amerato for almond extract if that makes a difference.

      I don't think the substitution makes a difference. I wonder what's making it too liquid. This recipe is one of my favorites but I haven't ran across this problem before. Maybe it has to do with the brand of cream cheese or mascarpone that you're using. Try to get full-fat, high quality. I typically use Philadelphia for the cream cheese
