For anyone that uses sheet music, Van Halen Best of Both Worlds Authentic Guitar Tab Edition by Alfred Publishing (2004) has the sheet music for every song off the Best of Both Worlds compilation (except the 3 live tracks) has guitar and tabs with keyboard notes above.

If you mean "how do you replace the piano", I used software called, Izotope RX 8 - Music Rebalance." (Though if I did it again, I'd use Demucs, which is free, btw.). If you mean, "how do you play that song?", practice, practice, practice!
Congratulations on your piano! Yes, I love that intro - it's the first thing I ever taught myself. And I used software (Izotope RX8) to remove the keyboards, so I'm playing with the original backing track, but all the keys are me.
