    Huge thank you to the Snow Mushroom Farm (สวนโสนเห็ดตับเต่า คุณหวาน) for hosting me. If you’re in Bangkok or anywhere in Thailand, you can order these giant mushrooms to your doorstep: bit.ly/3kcWTD9
    #Thailand #ThaiFoood #mushrooms
    Ayutthaya, Thailand - Just an hour from Bangkok, we had an opportunity to pick, cook, and eat - giant head-sized golden mushrooms! What I immediately liked, is that they do grow the mushrooms and farm them, but they do it in a very natural way, using organic natural methods, and the mushrooms grown naturally in the soil under the trees next to the river.
    Hed Dab Dao (เห็ดตับเต่า) - In Thai the mushrooms literally translate to “turtle liver” mushrooms - but I can assure you there’s no turtle and no liver in this video. We debated why they are called turtle liver mushrooms, and eventually we decided - and don’t hold us accountable to this, it’s just our guess - the mushrooms sort of have a liver texture, and they sort of look like a turtle from the top - so Turtle liver mushrooms. I did some research in English, and I believe that they are some type of King bolete mushrooms.
    After harvesting some literal head sized golden mushrooms to eat, we then went to cook them. They made three dishes:
    “Koy” mushroom salad (ก้อยเห็ดตับเต่า)
    Mushrooms with sweet basil (เห็ดตับเต่าผัดโหระพา)
    Curry mushrooms (แกงเห็ดตับเต่า)
    In order to cook all the mushroom dishes, he first sliced then boiled the mushrooms for about 5 minutes, then set them in cool water. From there, he made the three different Thai mushrooms dishes.
    The mushrooms were the highlight, they have an amazing texture, soft and tender, and just perfectly slimy, almost to the point where they melt in your mouth while being hearty and meaty - or livery - at the same time. It was my first time to try King bolete mushrooms (เห็ดตับเต่า) and I loved them!
    Thank you for watching this Thai food video, and hope you’re having a fantastic day!

    Great vid, Mark! I'm a mushroom enthusiast, or an amateur "mycologist," so I thought I'd share a few things! The King bolete mushroom - pronounced BOW-leet - is known by a few names, like Penny Bun, Porcini, or by its scientific name, Boletus edulis. The California king bolete grows in California as the name suggests, for example. It is a pretty *fun guy* ;) It is what's called a "polypore" mushroom, because there are many many pores beneath the cap. This is different from gilled mushrooms, which have gills that radiate from the stem in the center outwards to the edge of the cap. These pores release the mushroom's spores so that they can travel on the wind and land elsewhere to make more mushrooms! That's why we often use wicker baskets when carrying and moving mushrooms - the spores can fall from the basket as we go, planting more mushrooms just like Johnny Appleseed! So imagine a mushroom is the apple, with the spores being the seeds. The "branches," "trunk," and "roots" of the mushroom are called mycelium, and they grow underground. Neat!
    A cautionary note for anyone curious - please NEVER eat any wild mushrooms that have not been identified by experts! While there are many varieties of delicious mushrooms out in the world, there are others than can cause you serious problems (including death!). Some perfectly edible mushrooms have impostors that look just like them, but are bad for you. So please, only eat mushrooms that have been identified by experts, such as the wonderful people in the video. Happy hunting! :)

For languages, as much as I'd like to learn more of each language, I'm often in a country for just 7 - 12 days or so, so I'm usually not able to learn more than a few words. Hey Mark, the mushrooms in this video are not King Boletes (Boletus edulis), which have long been prized in western cuisine, but instead appear to be a somewhat related bolete: Phlebopus portentosus. While western cultures have not been able to find a commercially-viable way to cultivate B. edulis, it appears (from what I’ve been reading online) that P. portentosus has been cultivated in China and Southeast Asia for much of the last decade. If so, this is likely a mushroom that we will eventually become more familiar with in the West. Thanks for opening my eyes to a new-to-me bolete!

    • @henningbartels6245
      @henningbartels6245 3 года назад

      Danny, that's true. The mushroom doesn't look like the King Bolete you can find in European forests - in Central Europe often close to oak trees. The species in the video looks related though.
