Recipe for 1 kilo chicken: 2 tablespoon oil 1 tablespoon ghee 4 sliced Onion Cook the onion to golden brown Curry paste : 6 shallots 5 garlic cloves 1 teaspoon turmeric 1 tablespoon red chilli powder 4 teaspoon coriander powder 1 teaspoon cumin Lil’ Water for the paste Grind to paste Add the curry paste to the browned onion Cook for 2 minutes to release the oil from the spices Add 1 teaspoon sugar after the curry paste has been cooked Add salt to taste Add the chicken pieces and sauté with the spices Add 1 cup hot water to the chicken to get the gravy consistency . Cover with lid and cook for 15 minutes or until chicken is cooked to the bone When the chicken curry is ready , sprinkle half teaspoon Garam masala over the curry Check for enough salt Extra tip: you can garnish with chopped coriander or mint leaves
