The tempering should always be added finally after turning down the flame and lid closed for 2 mins for the correct flavor.
If you add liquid to tempering and cook, the mustard and chilly gets soggy.
Also if we're adding garlic and onion, no use of adding hing.

Toor dal is majorly used in authentic tamil recipe as well as most of south indian states majorly. Red dal / masoor dal is used in other states.
Nowadays, people use both masoor and toor combined as per individual preference.
Thank you dear for your version of kerala sambar.. We don't use garlic in sambar, otherwise this recipe is similar to ours..
Arent country Veggies the best ? - the locally available root vegetables and an assortment of string beans and long beans. The carrot is best served as a carrot halwa - what do you think? I see most people put carrot in chicken, biryani, avial, masala dosa filling with potato, uttapam toppings as well - The sweetness disrupts the flavors. Just my 2 cents . But I love the carrots in winter the best - Carrot and Matar ki sabzi. The colors are vivid and it tastes fresh out of the farm and with freshly made rotis made on wooden fire served in the villages of UP are the best ! Thanks
